Rancher's Blue Plate Special.....



This recipe is so good. Men love it! So... I thought it would be great for a Father's Day breakfast, brunch or dinner! It takes a little time but well worth it.


Rancher's Blue Plate Special, 6 servings 
  • Loaf of Whole Wheat Sourdough Bread, 12 slices
  • Butter
  • Parmesan Cheese, grated
  • Eggs, 12 large
  • Hollandaise Sauce, 1 package
  • Red Pepper
  • Tri-Tip Beef Roast, cooked
  • Garlic Pepper & Red Pepper
  • Chives

*Serve with sliced fried potatoes with onions

Directions:  
Make Hollandaise sauce, I use Knorr's package mix. (Just as good as any scratch made I've had.) follow directions on package. Add a "touch" or scant of ground Red Pepper to the sauce after blended. Less is more in this case. Simmer on low. *The Red Pepper is my secret ingredient! Wow, this is soooo good!

Slice the cooked Tri-Tip into thin slices, set aside
(*I buy mine fully cooked from the grocery) 
Prepare the sourdough bread; butter 12 slices, sprinkle with garlic pepper and grated parmesan cheese.  Fry the bread on a flat iron or griddle, both sides to toast.
While bread is cooking, toss meat with a touch of olive oil and heat in a medium fry pan to warm.
Fry 2 eggs person, over easy are the best, (The runny yolk blends beautifully with the other ingredients and hollandaise sauce!) but, also consider your guests tastes.

To assemble:
On each piece of cheese toast, 2-3 pieces of sliced meat
On top of that put a stream of hollandaise sauce
Next place a fried egg on top
Sprinkle with chives, optional
