Prime Rib Enchilada Dinner
I love my Prime Rib! And, I love to use every bit of my leftovers!
So here is another favorite recipe from my rerun's (leftover's)....
Prime Rib Enchilada Dinner
Quick, Easy and Yummy-li-ous!
1 package of Corn tortilla's
1 large family size of grated Mexican Cheese, such as Tillamook
Enchilada Sauce, family size tin...your choice
Mince Garlic, Minces Onion and Cumin, too taste
1 can of Olives, diced or sliced, drained
Sour Cream, 1 heaping teaspoon for the sauce, and reserves for garnish
Green Onions, 2-3, sliced
Prime Rib, cooked, about 3/4-1 pound, sliced & diced
MIX all ingredients except meat, cheese, olives and green onions...
blend sauce well over a low heat
After assembly of enchilada's, Bake at 375 for 25 minutes
Gather everything for assembling, place a small amount of sauce in the baking dish. Preheat the oven.
On the inside of the shell, place meat, green onions & olives
Add cheese and roll closed...place in a baking pan...repeat
Assembled and ready to bake....
Ummmm....Ready to eat!
Dinner is Served....
Ohhh, this is good!
