Roast Beef Omelet...

Roast Beef Omelet
 This brunch was very good. We are trying to eat better, while adding more veggies. I used brown gravy as my omelet sauce, roast beef, white cheddar cheese, chives and green beans. 
 2-3 eggs per omelet
Cheddar cheese, grated, 1/2 cup per omelet, reserve some for garnish
Chives, use as desired, inside and on top for garnish
Roast Beef, cooked, about 1/4 cup-1/2 cup per omelet, cut into small chunks
Brown gravy, cook according to the directions, set aside for garnish
Green beans, drain saute' in butter & garlic pepper, use as a side dish for the omelet.
 Prepare everything first, making the omelet assembly quick & easy
 When eggs are partially cooked, add meat and cheese, spices of your choice....I used a pepper blend.
The green beans were wonderful prepared this way and they go so well with the Roast Beef & Gravy!!!
A little cheese, roast beef and chives makes a nice garnish and a yummy presentation. The gravy was delish with the omelet!
