Creme de Menthe & Coconut Almond Brownies....

Two Styles of Brownies, Two Delicious Tastes...
Coconut Almond Brownies
You will need:
Your Favorite Brownie mix, follow directions & ingredients list on package
(I used sugar free brownie mix)
1 can of vanilla frosting, *I used sugar free
1 cube of butter, softened
1 teaspoon of pure vanilla
dash of salt
1/4 cup powder sugar
1 small package of coconut
Mix and prepare brownies according to package directions.
 Pre heat oven at temp on the package.
Place brownies in your pan of choice and bake as directed. *I used individual/mini brownie cake pan. Or bake regular pan, then cool & cut into squares.
While brownies are baking mix frosting together. This is a semi-homade version of butter cream frosting. I use sugar free canned frosting as my base to suit our families needs.
In a bowl, cream together:
1 can of vanilla frosting 
1 cube of softened butter
1 teaspoon of vanilla
dash of salt
Set aside to frost cooled brownies.
Spread the coconut on a baking sheet. In an oven set at 350 degrees, bake for about 7+ minutes until lightly brown.
Toasted Coconut....remove from oven and let cool. Set aside.
Baked and cooling brownies.
Brownies ready for topping!
Ice each brownie with frosting. Then add coconut and almonds.
These are YUMMY!

Cream de Menthe Brownies
Just in time for St. Patty's Day...
You will need:
Brownie mix of your choice, I used a sugar free mix.
Use the ingredients as requested on the package, follow baking instructions on the package. Place in the pan and bake per directions. 
*Before baking, add to the center of the mix, 1 unwrapped cream de menthe chocolate kiss. See above.
1 package of cream de menthe chocolate kisses
1 package of large marsh mellows
Mmm...smells yummy already!
Baked brownie, see the chocolate kiss center. 
While brownies are warm, place 1 large marsh mellow on top of each brownie. *If you used a solid baking pan, cool slightly then cut brownies in to squares. Then, place brownies on a cookie sheet, spacing the brownies apart. 
Then add your marsh mellows on top.
Place the pan in the oven at 350 degrees, for a few minutes. When they start to brown remove from the oven. They should look slightly puffy and golden.
Spray a table knife or flat spatula with cooking spray.  Flatten the marsh mellow gently with the knife.
They should look like these above.
In the center of each flattened marsh mellow, add 1 cream de menthe kiss.
This is looking GOOD!
Luscious "pools of chocolate mint" centers! YUM...
Let cool and serve! MMMmmm...Good!
Bundle in pretty packages or arrange on a pretty plate.
