Cabbage Rolls & Colcannon Potatoes Dinner
Colcannon is an Irish Dish mainly consisting of Mashed Potatoes & Cabbage.
There is also an Irish Song about about the dish. It is delicious, there are lots of variety's regarding this dish, but the basics remain the same. An old Irish Halloween tradition is to serve Colcannon with prizes of small coins concealed within it, as you would with Christmas Pudding.

Let's start with the Cabbage rolls first...
Ingredients Needed:
1 to 1 1/2 pounds of hamburger, I used extra lean
1 large head of cabbage, 6 large leaves for the cabbage rolls,
*Reserve the remaining cabbage for the Colcannon
1 egg
1 package of meatloaf seasoning
2 cups of chicken broth
1/2 cup of oatmeal grain
Garlic pepper to taste
Mix together; Hamburger, 1 egg, garlic pepper to taste and 1 package of meatloaf seasoning
Mix in 1/2 cup of oatmeal and mix well
Form meat mixture into 6 oval shaped fat/patties.
In a stock pot heat 2 cups of chicken broth. You will use this to dip the cabbage leaves in to soften and cook each cabbage leaf. You will wrap the softened leaf around the meat patty.
* When done with cabbage leaves, reserve the broth for the Colcannon.
Separate 6 cabbage leaves, for cooking to softened & wrap. I remove the stiff core before cooking.
Soften the Cabbage leaves in the broth
Roll cabbage leaves around the meat patties, add 1/2 of the broth, drizzling over the top of the meat rolls. Place in the oven at 350 degrees for 45 minutes.
*I also made a beefy brown gravy to top the cabbage rolls.
This dinner was excellent! A two thumbs up from all!
Colcannon Recipe...
This potato dish is wonderful and full of flavor!
Ingredients needed:
Cabbage,** use the remaining cabbage from the recipe above, slice in small thin pieces. or use 2-3 cups of chopped cabbage
Chicken Broth, 2 1/2 cups,** if using remaining broth from recipe above and you may add broth or water to equal measurement.
Garlic pepper to taste, go lightly...less is more
2-3 red potatoes, peel and grate
2 tablespoons of butter, divided
3 to 4 green onions, sliced fine
1/2 cup of whipping cream or milk
1 package of instant mashed potatoes, make according to directions on the package *(mine called for 2 cups of water to be added).
4-6 cooked pieces of bacon for garnish

Slice cabbage extra fine and add to the hot broth. Next, chop the peeled red potatoes fine and add to the pot. Cook on medium high. Reduce to medium as the cabbage & potatoes cook down. (*I have used only potatoes/mashed or only instant mashed potatoes. I use whatever I have on hand).
Add the green onions, 1 tablespoon of butter and garlic pepper. Continue to cook until everything is ready to mix together, see below....
Cook a package of instant mash potatoes as directed and set aside.
When everything is completely cooked, mix together the cabbage mixture and the mashed potatoes. Blend well! The Colcannon is almost READY!
Pour into the hot potato mixture, 1/2 cup of whipping cream and blend well.
**(Milk/Cream may be added to the liquid mixture while cooking or
added after cooked! However you like.)
Place in a serving bowl, make a hole with a spoon on top off the Colcannon and add 1 tablespoon of butter on top.
Next garnish the top of the Colcannon with crisp, chopped cooked bacon.
*I use kitchen shears to cut the bacon into small pieces.
Colcannon is done and ready to devour! YUMMY!
