Risotto it's not just for dinner!
OH Yummy! This was G-O-O-D!
Left over RISOTTO, left me wondering how else could I use this yummy rice!
My Loco Moco concoctions popped in my head!

Italian Breakfast Bowl....
Left over Asparagus Risotto,
(I found this at Costco, fully cooked, heat and serve). It was very good, quick & easy.* I cooked this,according to directions. Then, I let it cool to thicken and then reheated before I served. I used my left overs as my base for my breakfast bowl. Divide left overs into bowls.
About 3/4 cup per serving, is what I used.
Next layer crumbled bacon on top. About 1-2 full strips or 3 halves.
Fried eggs are the next layer. I cooked mine over easy, yolks runny.
Add 1 or 2 fried eggs as your 3rd layer.
Garnish with grated parmesan cheese and crispy onions.
This dish was very, very GOOD! This would be an awesome meal for a Brunch. This recipe will definitely impress your guests. So easy and simple too! Looks like you worked harder than you did!
