Cajun Crab Salad...Cool, refreshing & just a little bite from the spice
Simple quick and easy
Cajun Crab Salad
2 cans of crab...rinse, drain & squeeze dry
Unless you are lucky enough to have fresh!
In that case, use 1 1/2 cups.
2 green onions, sliced thin
1 or 2 small stalks of celery, sliced thin and in small pieces
1 can of sliced water chestnut's, drained & chopped fine
butter leave lettuce, washed & dried
Sour Cream, 1/2 to 3/4 cup
cajun spice blend, to taste
Cherry tomatoes for garnish
Asparagus and/or Hard boiled eggs as garnish also...
Rinse and drain crab. Squeeze dry.
Add all ingredients except sour cream and garnishes. Mix well.
Stir in and mix well the sour cream.
Yummy, ready to store in the fridge to chill until ready.
Chill before serving...tastes great cold!
Butter lettuce....
Wash and drain dry
Place lettuce in bowls (or plates) to ready for serving the salad.
Place a healthy scoop of crab salad on top...garnish and serve
The Crab salad also makes great appetizers! Just serve on crackers or sourdough bread, even pumpernickel!
