Huevos Ranchero's for Breakfast or Brunch....Delish!!!
Last Sunday, mid-morning, we (Hubby & I) threw together an awesome Brunch! We had some left over Prime Rib I wanted to use. SO we did!
Everything came together very quickly.
Huevos Ranchero's
1 package of Corn tortilla's, we used a small size (see the photo for reference)
Eggs 1 0r 2 per person (tortilla)
1-1 1/2 cup/s of sliced prime rib or your favorite beef
2-3 sliced green onions
1 small can of refried beans, heated
1-1 1/2 cups of shredded cheese, Mexican Blend
Jalepeno's, enough for each toritilla
and/or
1 small can of green chilli's, drained
Assorted or favortie taco sauces
Sour Cream, optional
1-1 1/2 cups of shredded cheese, Mexican Blend

I fried each tortilla, I used, on both sides. Then set aside to await assembly.
Have all of your ingredients ready to assemble and/or heat.
Fry your eggs to taste; over easy, medium, etc.
*I made our eggs over easy.
**If you have guests, let them assemble their own so everyone's food will be hot!
Spread the warm re-fried beans over the tortilla's.
Sprinkle with grated cheese, warmed meat and peppers.
Place the fried egg on top. Sprinkle with green onions and hot sauce. Add a dollop of sour cream if you like.
And they are ready to serve....
Mmmm....Yum for the Tum!
