Sweet Cherry Wine & Chocolate Cherry Chunk Ice Cream...
Today...Two types of Ice Cream, One recipe...
This is Chocolate Cherry Chunk...
I also made Sweet Cherry Wine... easy to do use vanilla or chocolate ice cream as your base.... For the Chocolate, I left the fruit chunky. On the Vanilla, I blended the cooked cherries to create bits & pieces....

Basic Recipe:
1 box of ice cream, chocolate or vanilla...your choice, soften and set aside...
2 1/2 cups of fresh cherries, pitted
1 tablespoon of honey
2 tablespoons of stevia or sugar
2 tablespoons of red wine...I used Cabernet
1 tablespoon of AGED Red Wine Balsamic Vinegar
Preheat the oven to 350 degrees
Prepare the cherries then,
Mix remaining ingredients together. Blend well.
Line a baking sheet or shallow pan with parchment paper..I use pam spray to help hold the parchment paper in place while cooking.
Place the cherries on the lined baking sheet, pour the liquid mixture over the top of the fruit. Place in the oven and bake for 30-40 minutes...the cherries will turn a dark red color and become juicy. Remove from the oven when done and lest rest for 15 minutes. The wine mixture will have created a nice juicy reduction.
**Fruit with the juice may be placed in the blender to create bits & pieces. Or... cut into chunks with kitchen shears.
Blend the fruit & juices into the softened ice cream, blend well and refreeze. You may use the original ice cream carton , along with an additional container as your ice cream will increase in volume due to the fruit mixture. Ice cream molds or mason jars work great too!

Place fruit mixture on the baking sheet...
Oven is set for 350 degrees and the timer is set for 30 minutes...
After 30 minutes your fruit should look like this ...
The parchment paper makes it easy to pick up the fruit and place in a container....
You can decide if you want chunky fruit or bits & pieces

Blending the cooked fruit with vanilla ice cream...
For this dessert I used mason jars for my containers, later I added brownie bites and whip cream....
I layers these jars...I froze sweet cherry wine ice cream, then added chocolate cherry chunk on top. And served with a whipped cream topping.
This is layered with sweet cherry wine, brownie bites and chocolate cherry chunk... next... top with whip cream and a cherry
