The Cattle Baron's Breakfast...

The Cattle Baron's Breakfast...
In the middle of the egg...a Butter Roasted Garlic Clove! Yummo!
This recipe is another take on Egg's Benedict. The difference?
Grilled Sourdough Toast & Hollandaise sauce made with Champagne Butter.
Ingredients Used:
Beef Tenderloin, (cooked) & slice..then grill to warm
Champagne Butter (See recipe here)
Eggs, fried or over easy, 1 to 2 person
Sourdough bread, sliced and grilled with champagne butter
Hollandaise Sauce, * I used a Knorr's pkg., follow directions and use champagne butter instead of plain butter
Garlic bulbs: roasted , for garnish
Garlic Pepper to taste
Red Pepper for garnish
Have the Hollandaise Sauce made, ready and waiting. As I said above, make per directions, using the champagne butter in place of regular butter.
Grill the tenderloin, bread and garlic bulbs...use you Champagne butter for grilling.
YUM! I put sliced garlic bulbs in the meat, then grilled the meat.
 Assembling your Breakfast/Brunch:
1 Grilled Sourdough bread slice
1 slice of grilled tenderloin
1 over easy egg
drizzle with hollandaise sauce
Serve with grilled potatoes
 Holy Cow...this is G-double O...Good!

Mexicali Steak Salad...

Mexicali Steak Salad
With the nice weather here, a spring salad sounded good for dinner.
YUMMO...
 My Mexicali Salad Ingredients:
Lettuce, washed and chilled...
3 small tomatoes, sliced & chopped
2 green onions, sliced
Avocado, 1/2, sliced with lemon juice drizzled on top to prevent browning
1 small can of sliced black olives, drained
2 radishes, washed and sliced thin
Jalapenos, sliced, add the amount you wish
Cheese, grated for garnish
Cilantro, washed, cut into small pieces, add desired amount
Cooked Steak or Tri Tip; 1 1/2 cups, sliced and seasoned with spice...
I used a 5 pepper spice
1 tablespoon of olive oil
Sour cream
Tortilla Chips for garnish if desired
Salad Base in a large bowl:
Chopped Lettuce, Olives, Tomatoes, green onions, radishes and cilantro
Mix well, then...
 Prepare the Salad toppings...
I cut the steak into bite size pieces, added the five pepper seasoning and tossed with olive oil. Warm the meat to blend the seasoning, serve warm on top of the salad. Have salad toppings prepared to and ready to assemble the salad. Salad toppings: meat, cheese, jalapenos, tortilla chips, sour cream & avocados.
The cilantro & radishes add a wonderful flavor to this salad.

Chocolate Rum & Carrot Cake...

Chocolate Rum & Carrot Cake
A Simple & Quick Recipe
This Cake is super moist. It has a secret ingredient and it's NOT the Rum!
It's sweet potatoes! Yes...You heard right! It adds to the cake without overpowering it...No one would guess it's in there! Plus the cake is so light and moist!
Follow directions on your cake box...
BUT, just so you know... it will probably cook 10-15 minutes longer...because...it is very moist!
So...here is what you need to do...
Use your regular cake mix, (I used sugar free)
Gather ingredients according to the cake mix,
BUT...make these changes;
1. If your cake mix calls for water add RUM instead
2. Add 1/2 cup of smashed cooked sweet potatoes (I froze my remaining potatoes for a later use)
3. Add 1/2 cup of finely chopped pecans, I roasted mine with a little salt first.
4. Add 1 cup of shredded Carrots
5. Then add the oil that is required on your cake mix box along with the eggs that are required.
Mix well
I used Pam spray to prepare my pan.
Bake according to the cake mix box directions. Keep in mind you may need to add additional baking time due to the moist nature of this cake.
I used prepared frosting for my cake to save time.
 Adding Rum to the Cake...
 Mixed and ready to bake!
Since I had a time consuming dinner I was preparing...I took the simple way out and went with a simple presentation and canned frosting.
This cake was very good and no one knew it was made with rum or sweet potatoes! They just LOVED its taste!

Italian Wedding Soup...

Italian Wedding Soup...
Homemade Goodness :)
This soup was soooo good...I will NEVER want to eat it from a "can" EVER again!
Photo shows Meatball ingredients; recipe below...
 Italian Wedding Soup Base:
*Meat ball mixture listed below....
12 cups of Chicken Broth
2 cups of water
1 cube of Chicken Broth (low sodium), *optional I love a bolder broth taste
1 package of Spaetzle or other Egg Noodle Style Pasta
1 frozen package of Chopped Spinach, thaw and squeeze dry
1 package of chopped (cubed) carrots, onions and celery
1 tablespoon of butter for sauteing veggies
Garlic cloves, to taste;* I used a smoked variety ...YUMMY, chopped fine
2 eggs, scramble by lightly beating with a fork, (*add later)
Pepper & Cumin to taste (you do not need salt added)
1 cup of grated Parmesan cheese (*add last)
Instructions below...
Cut garlic cloves into pieces...then add to the broth; see below
In a large stock pot add...
Broth, Seasonings, Spinach, Water and additional *Broth cube
Add the garlic pieces...
Set burner on medium and simmer as you finish preparing the soup.
Saute' the veggies (package of carrots, onions & celery) in 1 tablespoon of butter.
Add to the soup broth to simmer.
Meatballs are next!
THEN we finish the soup!
Meatball Ingredients & Instructions...
1 pound of hamburger meat; ground, *I used extra lean
1 package of Sausage, ground
Panko Crumbs, heaping 1/2 cup
Parmesan Cheese, heaping 1/2 cup
1 egg
Seasoning to taste: Garlic salt, Pepper & Cumin
Mix all ingredients together well and form into meat balls. Any size you desire, just adjust time if smaller meatballs.
Bake at 350 degrees for 20-25 minutes....
Then add meatballs to the hot soup base to continue cooking.
Mixed and making into meatballs...
I made large meatballs...You only needed 1 0r 2 in a bowl per serving...otherwise I would make them bite size.
It just depends on how you want to make your Soup presentation.
The meatballs are ready to add to the soup...
After the meat has been added....Add the pasta...
Continue to cook the soup until pasta is ready....
Then we add the final touches to the Soup...
Scramble the two eggs in a pouring vessel/pitcher...Slowly pour the raw egg into the hot soup while stirring the soup slowly!
Let Cook for 5-7 minutes more...
 Lastly, and just before serving...
add 1 heaping cup of grated parmesan cheese...
The last two steps of the soup...
brings a gourmet finish!
As I said; "This is the BEST tasting Italian Soup I will  have EVER eaten!"
YES, It's that GOOD!
This Gourmet Soup is full of Taste & Style...
Enjoy...

April Fool's Prank; Faux Sushi...

I couldn't wait to share these April Fools Treats for several reasons! (They are sooo cute & tasty too!)
"April Fool's Sushi"...
I know its Easter tomorrow BUT...it's April Fools MONDAY....
Yikes...trying to get everything done is...Well CRAZY...but FUN!
Can't disappoint the Grand kids!
*Secretly... I am already worried about next years April Fools food gag! It has to be GOOD, 'cause this one is SO cute! :S
 Too Cute....Too Fun
Everything is candy & desserts. The prep time is the biggest issue...you have to unwrap everything! Assembly is quick!
The fruit roll-ups are perfect to wrap the slices of little cakes/sushi. The candy sprinkles substitute for caviar eggs. The Octopus was NEW to the market for sweet and sour gummys, so scored on that one! Whoo-hoo!!!
The sea weed wrap on the rice cake is licorice, fruit wrap & rice krispies!
AWESOME!...
Here are a few items I picked up at the store...I grabbed anything I could find to make the sushi! Since Hostess is out of business, I had to locate Little Debbie Products...That was work! Finally found them at Walmart....A lot of the grocery stores don't carry them anymore. So much quicker than making them from scratch.
I used a wet washcloth to help keep my knives clean as I worked....
I used canned frosting to glue the candy in place. Just takes a tiny bit...so freeze or plan to use the frosting on something else. You will have a lot left over! The containers were cute for packaging.
Sorry for the shadows...couldn't get away from all the beautiful sunshine flowing through the window!
You can see the assembly in this photo above: Fruit roll-ups, a cloud cake and yogurts pop drops....
Hers is a partial view of a platter of faux sushi...
Here is a photo assembling a faux fish/rice cake with caviar....
Above is a small carry out sampler of faux sushi...
I made these for adults!
This presentation is too cute...
Don't forget the chopsticks!!!
If your Kids like chinese food....it would be fun to order dinner and slip these in with the other food... HeeHee
Ready & Waiting to be delivered!
I can't wait to surprise the Grand Kids with these treats! When I do...We will add an Updated Photo!!!
UPDATED PHOTOS....
The Grand Kids had fun with the faux Sushi...
"Little Hambones!"

7 out of the 9 grand kids were around for the photo shots!
We also made drinks for the kids Easter...
Jello drinks: Jello & Ginger-Ale in place of juice drinks
They loved it!  Well,...almost all of them....
The youngest wasn't sure about her drink! We could not get her to try it!
HA-HA
Have a Fun April Fools full of Style...
