Loaded 'Tater Chips...

Oh My....You have seen something simular at restaurants. But WOW, these are truly yummy, you will make them again & again! Serve as an appetizer or serve during the next big game... It will be a hit!

Loaded 'Tater Chips
  The CattleQueen Cooks


Ingredients:

1 bag, family size, of Kettle Chips, Salt & Pepper Style
1 jar of Four Cheese Alfredo sauce
1 1/2 cups of Jack Cheese, grated
3-4 pieces of bacon, cooked crisp & crumbled, prepared and ready for topping
1 medium yellow onion, sliced thin
1 tablespoon of butter
Pine Creek Ranch Seasoning or garlic pepper, to taste
1/4 cup of small Blue Cheese crumbles
Balsamic Oil & Vinegar Dipping sauce for drizzling

Directions:

In a sauce pan, heat on medium to low, the Alfredo sauce & the grated Jack Cheese. Cook to blend & meld together, keep sauce warm
Then In a small fry pan sauté the sliced onion with the butter and season to taste with the seasoning
Next, layer the Chips on a large serving plate, in a stacked pile
Gently pour the warm Cheesy Alfredo sauce over the top of the chips
Add the sautéed onions over the top of the sauce and chips
Place the crumbled bacon bits over the top of everything
Drizzle the Balsamic Dipping sauce over the top everything
Add the Blue Cheese Crumbles as the finished topping

Serve immediately.....

Notes:
*Serve as an appetizer
*You may choose to serve sliced, green onions over the sautéed onions, use 1-3 stalks, sliced.

Bacon Pecan Fudge...

Bacon Lovers....Get ready for this amazing fudge! Bacon Pecan Fudge....A wonderful blend of Sweet & Salty....It will tickle your fancy!

Bacon Pecan Fudge
   From The CattleQueen Cooks at PineCreekStyle


18 ounces of candy brick
3/4 cup of Sweetened CONDENSED milk
4 teaspoons of buttermilk ( instant buttermilk works great)
1 teaspoon of pure vanilla
Very light dash of salt, optional
1 cup of chopped pecans, * optional-any favorite nut works
3-4 pieces of bacon cooked crisp, chopped fine
**Caramel to drizzle on top of the hot fudge, once it's in the pan....**does add stickiness to the fudge on one side...that's why it's optional! But adds a touch of Carmel flavor..personal preference.....

Directions:
-Place your sauce pan on a medium heat
-Add sweetened condensed milk, and 18 ounces of chocolate candy brick
-Add milk, vanilla and salt
-Constant SLOW stirring of ingredients with a spatula
-Have a foil lined pan, 9x9 or 10x10 waiting for chocolate
-Fold in the bacon bits and nuts when fudge is done and just before pouring into your pan!

*This is where the patience come in, continue stirring slowly. Do Not Leave the pan. The mixture will turn a RICH dark brown color. When it has a shiny look to it, pour into the prepared w/foil pan.


STORE IN THE REFRIGERATOR FOR 4 HOURS MINIMUM BEFORE CUTTING INTO SMALL SQUARES. I cut as I need, so the fudge does not dry out.

Full of "BS" Sauce (Bacon & Sour Cream)...

We were in Alaska recently visiting family...
We did a lot of sight seeing and FOOD tasting! One sauce stood out among all the rest...
We had embarked on finding the BEST hamburger the Anchorage Area had to offer...
Well...we had lots of awesome burgers...BUT the sauce served with the Hamburger at the West Rib Deli & Pub in Talkeetna, Alaska was the absolute best!!!
SO of Course...
I wanted to make a version of their FAT ASS Sauce!
It was Wonderful...
I had asked what was in the sauce when I ordered it to accommodate my burger...The waiter...hummmmed, then spouted out a few ingredients & "special spices"! So wrong HE was...BUT the sauce WAS awesome! I knew with just ONE bite... that the main ingredients were not (ALL) listed correctly...
MMMmmm...recipe search or experiment...
I was going to try and make this sauce....
 Since I don't have the official ingredients....I came up with a semi-version of my own and called it "Full of B.S. sauce"
Because, it is full of Bacon & Sour Cream!
*I have seen several ingredients listed for Fat Ass sauce...None are the same!
So...here is a version of mine....
Found & made from one list of ingredients posted online.

"Full of B.S. Sauce"
2 small onions chopped fine, saute' in 2 table spoons of butter
1 carton of Sour cream, 16 ounces
6 pieces of bacon cooked crisp, and broken into small bits & pieces
Blend 1 table spoon of garlic salt and 1/2 tablespoon of white pepper
2 table spoons of horseradish, old fashion style or chunky
Blend well and store in the refrigerator up to one week.
*This sauce was very tasty, I used it on several food items, soups, stews, hot sandwiches & used as a dip for crackers.

The Featured Hamburger was a 4 1/2 pounder w/ Fat Ass Sauce...Man Won!
 Bacon, onions, horseradish & spices mixed well...
(before I added the sour cream).
 Mixed, jarred and ready to use...
Not quite the FAT ASS Sauce recipe I was looking for...but, this one is really good!
The ingredients made a wonderful spread/sauce....Very tasty!
We ate every last bite! Anything with BACON works for ME!
I will continue my quest to make a close version of the real Fat Ass sauce!
For NOW....This recipe WORKS just FINE!!!
