Apple Pie Whiskey...

Apple Pie Whiskey.... Infused Whiskey that tastes as good as it sounds. I love using this for sipping whiskey, a splash in my coffee and so many recipes ....Love Apple Crisp over Vanilla Bean Ice Cream with a splash of this infused whiskey on top!    *This is a recipe for 21yrs and older! **The alcohol cooks out when incorporated into  & cooked the recipe.

Sangria..Pine Creek Style

Granddaughter K-8 requested Sangria for Thanksgiving....Oh MY...this was a hit! Everyone loved this Sangria and wants the recipe! Perfect for Christmas & New Years!
The taste was amazing and the Punch Bowl was dry!
Sangria...Pine Creek Style
Author: The Cattle Queen Cooks

Ingredients:

  • 1 bottle of Cabernet or Red Table Wine
  • 1 liter bottle of 7-Up for Sprite ( I used Diet), chilled
  • 1 bottle of Simple Syrup
  • 1 cup of Dark Rum
  • 1/2 cup (or a half of can) of Cranberry Sauce
  • 1 teaspoon of Cinnamon, leveled
  • 1/2 teaspoon of Nutmeg, leveled
  • 14 teaspoon of Cloves, leveled
  • 1 tablespoon of Lemon Juice
  • 1 medium Orange, sliced in half and then sliced thin
  • 1 medium Lemon, sliced
  • 1 can of chopped Pears, drained but reserve the juice
  • 2 small Red Delicous Apples, chopped small
  • 1 can of Peaches, sliced, drained, reserve the juice
Directions:
  1. In a sauce pan cook a reduction sauce over medium heat: Together add the Simple Syrup, Cranberry Sauce, Lemon Juice,  Cinnamon, Nutmeg, Cloves & Rum. Blend together with a wire whip. Bring to a boil, then continue to cook on medium to reduce and thicken the sauce. After about 5-7 minutes on the reduced heat. Remove from the burner and let cool. Stir in the reserved Juices from the Peaches and Pears. Blend well.  At this point I placed the reduced liquid into a mason jar to cool in the refrigerator .
  2. In a large punch bowl, add the fruit; Pears, Apples, Peaches, sliced Lemons & sliced Oranges
  3. Pour the Red Wine over the top of the fruit
  4. Next add the cooled Rum reduction, blend well
  5. Slowly pour the liter bottle of 7-up (Sprite) to blend in with the Wine & fruit mixture
  6. Preparing the fruit!
  7. You may add ice to chill further & Serve (*No need for waiting serve, the cooked Rum reduction with season your Sangria perfectly!)

Notes:
* In addition: Freeze fruit in water, to make an Ice ring or round mold of 2-3 inch thickness, for a large decorative ice cube

* If taking this recipe to another location, place the fruit together in a large baggie, transport the Rum reduction in a jar or doubled baggie, and the unopened wine and liter bottle, mix after arriving in a Punch bowl.

* Any fruit left in the punch bowl is an awesome snack for later. Just bag it up and place in the fridge!

Buttered Rum Batter...

Butter Rum Batter....
  This past week, I have had serveral emails, and a few phone calls, asking about Buttered Rum Batter. Most of the time, I use the store bought varitey found in the liquor department of the grocery stores. Usually on an end cap during hloidays or with other "stir-in's" in the liquor aisle. ANYHOW...
This got me looking for my Grandma's Original Recipe for Buttered Rum Batter...She, as I do, used it in several desserts, cocktails and Coffee!...It's also good in Hot Choclate for an "Over the Top Treat"!

Buttered Rum Batter
The CattleQueen Cooks

Ingredients:

  • 1 pound (box) of Dark Brown Sugar
  • 1 cube of softened butter, room temp (I use Salted Butter)
  • 1 1/2 teaspoons (or 1 teaspoon) of ground cinnamon
  • 1/2 teaspoon leveled, ground nutmeg
  • 1/2 teaspoon leveled, ground cloves
  • 1 teaspoon of pure vanilla
  • Pinch of Salt
  • Pinch of  Cayenne Pepper, I use a big pinch. This optional but WOW its good!
Directions:

  1. Blend all ingredients together, by creaming gently with a pastry blender, then a fork or spoon.
  2. Mix thoroughly. 
  3. I bottle the batter into smaller mason jars.
USE:
For Cocktail mixes, Baking, Meats, Coffee & Hot Chocolate.... oh the possibilities !

Hot Buttered Rum Drink:

  • Place 1 heaping tablespoon of batter, in a 8-10 ounce mug
  • Add 6-8 ounces of hot water, mix well together
  • Stirr in a large jigger of Rum (1 1/2 ounces), blend
  • Serve Hot!
  • If you want it with cream, add 1 tablespoon (or desired amount) of cream or ice cream, like Grand Dad did!

Pomegranate Liqueur for the Holidays....

Let the Holiday recipes begin...This homemade liqueur is simple and may be used in many different dishes & cocktails... This recipe has been viewed and pinned hundreds of times! Worth the pinning...YUM! 
Pomegranate Liqueur

Ingredients:

  • 1 - 750 ml of white Tequila (or Vodka, our choice)
  • 2 cups of Pomegranate juice
  • 1 cup of water
  • 2 cups of sugar
Directions:

  1. Combine the juice, water & sugar in a large stock pot. Bring to a boil. Gently boil for 5-7 minutes while slowly stirring , until the sugar dissolves .
  2. Remove from heat and cool completely .
  3. Pour together the cooled juice mixture and the tequila (or vodka) into a large vessel.
  4. Place in a cool dark area for about 10 days so the flavors meld together.
  5. This recipe doubles nicely 
Great fall color with a sweet tartly taste....
Serve your Holiday Dishes with Style...

Spiced Rum-Infused...

Spiced Rum-Infused
Spiced Rum-Homemade Infused

Ingredients:

  • 1 bottlle of dark rum (your brand) 750ml
  • 20 plumbs or 40 halves of pitted plums, no need to peels skins
  • 1 teaspoon pure vanilla extract
  • 1 cup Brown Sugar, loose
  • 1/2 + teaspoon Nutmeg
  • 1/2 teaspoon Cloves
  • 1/2 teaspoon Cinnamon
  • 1/3 grated Orange peel
DIRECTIONS:
Mix together in a large mason jar, let meld for 2 weeks. Strain fruit & peel from the Rum.
Rinse Plums and save for Recipes, such as my Plum Drunk Cake found HERE. Fruit may be frozen & used for recipes later.
Your Spiced Rum is ready to Serve...



Update: I am so glad I keep a working recipe journal....AND that I belive in hard copies for EVERYTHING! I recently reposted this recipe for the upcoming holidays and discovered that the recipe had been lost on the internet! YIKES! So I pulled out my Recipe Journal that looks more like Chicken Scratch...AND re-posted! Sorry for any inconvenience....so glad I had the hard copy! WHEW!!!.....

Plum Brandy...

Plum Brandy...Mama D loves this flavored Brandy...Below, I've also added two quick recipes for Plum Drunk Ice Cream & Plum Drunk Pudd'n....Mama D's newest faves....This recipe was a hit when I first posted this recipe last year, Enjoy....
 The Recipe...

Plum Liqueur:
  from PineCreekStyle

  • 500 ml of unflavored Vodka
  • 250 ml of Brandy
  • 1/4 cup of Simple Syrup
  • 2 tablespoons of fine sugar
  • 3-4 cups (depending on size) of plums, wash, cut in half & remove pits 
Directions:

  1. Prepare the plums, place in a plastic zip lock bag 
  2. Pour the Simple Syrup over the top of the plums, seal and place bag in the refrigerator over night or for at least a couple of hours.
  3. Next Day (or later in the day) using a large vessel, such as an Extra Large Mason Jar,...add the soaked Plums. Then pour the Vodka & Brandy on top of the fruit.
  4. Add the extra fine sugar.
  5. Tighten the lid to the jar and shake gently. Place in a cool dark area such as a shelf or counter top for up to 30 days! *I prefer to keep mine in the refrigerator, but that is just my preference. 
  6. During the infusion time, gently shake the jar every 1 - 2 days. Taste every so often, so you may decide how long you want to retain the fruit.
  7. When the infusion has reached your desired taste, drain the liqueur into another vessel. Place the fruit onto cheese cloth,  draped over a sieve. Place the sieve over a bowl or pitcher to catch excess liquid. Press the fruit, wrapped in cheese cloth, into the sieve and squeeze the remaining juice/liquid out of the plums. Repeat until all of the plums are pressed. Throw away the spent fruit. Using a smaller sieve/filter pour the squeezed fruit juice into the rest of the Plum Liqueur.
  8. The Liqueur is now ready for use. 
  9. Store the Plum Liqueur in the refrigerator, until needed.
I use this Liqueur for cooking & baking, grilling sauces, cocktails or as gifts at the Holidays.
Easy to make! And adds a wonderful flavor to your recipes.

Bonus Recipes:::

Plum Drunk Ice Cream:

  • 1 have gallon of Vanilla Bean Ice Cream, softened
  • 3/4 Cup of pureed infused Plums, pitted and pureed
Mix well and re-freeze & Serve

Plum Drunk Pudd'n:
  Author: Pine Creek Style


  • 1 Large package of Vanilla Pudding, instant mix
  • 1/2 cup of pureed infused plums, pit & pureed 
  • 2 1/2 cups of milk
Mix all ingredients together, blending well. Follow directions on the box...and chill in the refrigerator until serving.

Bloody Maria's...

I love a good Bloody Maria....years ago a bartender at a golf course in the Hawaii Islands shared his recipe with me...I adjusted his recipe to a smaller batch...His recipe, of course, was for a bar crowd!

Bloody Maria's
Blood Maria's Recipe from The CattleQueen Cooks


  • 4 cups of Mr & Mrs T's Bloody Mary mix, extra spicy
  • 1 tablespoon each of Lemon & Lime juice
  • 1 tablespoon Horseradish, prepared
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon minced Garlic
  • 1 1/2 teaspoon Chipolte Tabasco sauce
  • 1/2 teaspoon Garlic pepper or Worcestershire pepper
  • 3/4 teaspoon of Celery Salt
  • Mix well and Chill
  • ~~~
 To make Drinks:
Optional: Rim glass with a lemon or lime wedge and dip in salt
 (or a chili salt combo)
Add ice to a cocktail glass,
Add 1 ounce of Tequila ( *I use Patron Silver) 
Fill glass with cold Bloody Mary/Maria Mix
Garnish with: Celery, olives, onions, asparagus, green beans or green onion
Serve with the above Menu
Bloody Maria: made w/ Tequila
Bloody Mary: made w/Vodka
Bloody Shame: No Alcohol

Blood Orange Tequila...

This is the perfect season for Spirits.....like my homemade Blood Orange Tequila!
Blood Orange Tequila

Ingredients:
  • 1 - 750 ml 100% proof Silver Tequila
  • 2 cups of fresh squeeze Blood Oranges (or just Oranges)
  • 1 cup of water
  • 2 cups of sugar
Directions:

  1. In a Large sauce/stock pan combine the water, Juice and sugar bring to a boil. Let boil gently for about 5-7 minutes until sugar dissolves.
  2.  Remove from the heat and let cool.
  3. Mix together, in a large jar the vodka & the Blood Orange simple syrup. 
  4. Place the Jar in a cool/dark area of the counter, shake and blend together once a day. Let cure for 10 days...this will allow the flavors meld together
  5. This yields about 5 cups, more or less
This recipe doubles easily....

Awesome for use in recipes and cocktails. Perfect color for fall gatherings

Limoncello Liqueur, Homemade Happiness...

Limoncello Liqueur.....Homemade Happiness in a Jar!
I recently made one of my specialty cakes, and needed some Lemon Vodka... Instead I decided to make my own Limoncello Liqueur for the recipe! so glad I did, WOW is it good! I think it was a great addition to my Lemon Vodka Cake....YUM...I will post that cake recipe later this week!

Limoncello Liqueur

Ingredients:

  • 1 - 750ml  100 proof Vodka, *I used Citrus flavored Vodka for a little extra boost of flavor
  • 7-8 Lemons, juiced
  • 1 tablespoon Lemon Extract
  • 2 cups white sugar
  • 2 1/2 cups of water
Directions:

  1. In a large sauce pan, combine water and sugar bring to a boil. Bring to a gentle boil for about 5-7 minutes, dissolving the sugar.
  2. Remove the simple syrup from the heat and cool, set aside
  3. Mix together, in a large jar, the vodka, juice and extract. Shake or stir to blend.
  4. When the simple syrup has cooled, add to the Lemon Vodka mixture. Blend or shake well together.
  5. Place the lid on the jar and place in a cool, dark corner on the counter.  Leave the mixture to sit for 1o days, shaking to blend, once a day. This will let the flavors blend together.
  6. Yields about 5+ cups more or less
This recipe may be doubled easily. 


**This recipe is great for cocktails, cooking & baking recipes. This recipe makes the perfect gift for the Holidays too!

Coffee Liqueur...Homemade Style...

My Local grocery is no longer carrying the Coffee Liqueur I use!. When you live in a small town...you have to adapt! So, I made my own! It turned out so delicious, better than the name brand! More flavor, I think! YUM!
This recipe made a good size portion...and was much less expensive than the store bought brand.
The beauty of this recipe....You may use different types of alcohol to suit your tastes and cooking needs. See below! Very easy! So happy how this turned out! And so happy I came up with a new versatile recipe! Yummy!

 Homemade Coffee Liqueur
 from The Cattle Queen at PineCreekStyle

Ingredients:

  • 5 cups of water
  • 3 cups of packed Brown Sugar
  • 1/4  Cup of Espresso, Instant Coffee 
  • 2 teaspoons of pure Vanilla
  • 1 750ml of Tequila. (I used silver)
  • Recipe yields about 8+ cups of liquid


Directions:

  1. Heat the water in the microwave on high for five minutes. Use a large mixing bowl or pitcher .
  2. Remove from microwave and stir in the brown sugar, vanilla and instant espresso.  Stir gently to dissolve sugar  & coffee Let cool completely.  * You may do this process on the stove top.
  3. Pour the Tequila in the coffee mixture and stir gently to blend.
  4. Transfer the Coffee Liqueur into 2 vessels, I used large mason jars. Leave room, in the jar, to shake to blend the liqueur as it cures.
  5. Set in the filled jar a darkened area on the counter, shaking 1-2 times a day, for 10 days.
Ready to use ....

You may substitute other Alcohols in equal amounts: Rum/Kahlua , Vodka, Whiskey  or Everclear.
It all depends on your taste or the recipes you want to use. Great for Coffee drinks, Cocktails or Cooking Recipes & Sauces.

We had quite a few plums from our tree, the first crop! Of course, recipes of  sugar plums danced in my head! This is a great homemade infusion for use when baking recipes or making cocktails....The Plum Liqueur is also a great gift...The Holidays will be approaching soon...
 The Recipe...

Plum Liqueur:
  from PineCreekStyle

  • 500 ml of unflavored Vodka

Decadent Strawberry Tequila Cake...

A bakery style cake with home made taste! This cake was amazingly simple to make & the taste is heavenly!

 Decadent Strawberry Tequila Cake
          from Pine Creek Style

  1. One white box cake mix
  2. Tequila; enough to equal the liquid measurement on the cake mix * (My box called for 1 cup liquid)
  3. 1 tablespoon of vanilla powder
  4. 1/2 cup of strawberries for infusing: cut strawberries, place in a cheese cloth bouquet bag... see directions 
  5. 1 tablespoon simple syrup or clear Karo syrup
  6. Eggs & oil as called for on the cake mix box
  7. additional 1/2 cup of fresh cut strawberries to be used for the filling
  8. 1/2 can of prepared vanilla frosting for the filling
  9. A heaping 1/2 cup of melting chocolate for ganache & 1/4 cup each of white & pink chocolate for candy topping 
  10. 1/2 cup of Whipping cream for the Chocolate ganache/frosting
Directions:
First, make the Tequila infusion, then the cake batter.

  •   In a large vessel, pour in the required tequila for the liquid measurement. Example: 1 cup of tequila, 1 tablespoon of simple syrup and the bouquet bag with the cut strawberries inside. Drop the bouquet bag in the tequila mixture and heat in the microwave for 40 seconds on high. Let cool. Then squeeze the bag into the pink tequila to drain. Set aside strawberry tequila to cool & use later to the cake batter. Discard the bouquet bag.
  • Mix the cake batter as directed (eggs, oil etc.) on the box using the infused strawberry tequila. Also add the vanilla powder at this time. Mix well and place in a prepared baking pan.
  • Cook the cake according to the directions on the cake box. Cool.
Filling:
 Between the cake layers, mix:
1/2 cup of chopped strawberries, fold gently into 1/2 (-3/4) cup of canned frosting. Use this to fill between the cake layers.

Frosting/Ganache:
Make a Dark Chocolate Ganache for the top.

  1. 1/2 to 3/4 cup of melting chocolate in a sauce pan
  2. Slowly add 1/2 cup of whipping cream to the chocolate , stirring constantly
  3. 1 tablespoon of tequila, optional
  4. Stir until melted completely and shiny in appearance.
  5. Cool, slightly warm, and pour over the top of the cake
Chocolate Candies

  • Melt the chocolate's (1/4 cup per color)  and use a teaspoon to drizzle melted chocolate in a desired pattern onto waxed paper. Let harden and use as candy decor on top of the ganache/cake. See photo for example


The above photo shows the different steps of the cake.
Drizzle chocolate in the pattern you wish....Let harden then place on cake top.

Cherry Vodka Bombs...

Oh WOW...these were the Bomb! Amazing little gems...BUT, be careful...they pack a wallop!
 These are so simple...But,  there is some patience involved....You "gotta" soak the cherries for 5-7 days in the Vodka! See the recipe below...*(2-3 days works also...but the flavor won't be as strong)

Cherry Vodka Bombs

  • 1 batch of Cherries, pitted & presoaked/infused with Vodka (see that recipe here)
  • 2 cups of  melting chocolate candy for diping
  • wax paper
  • This is a recipe for the 21 & Over Club!
Directions:

  1. Drain the Cherries from the Vodka, set on a paper towel to soak up excess moisture
  2. Melt candy chocolate according to the directions on the package
  3. Working quickly, Dip the drunk'n cherries, one at a time,  in the melted chocolate and place on wax paper or parchment to harden. Repeat
  4. *** If you choose to leave the stems on a few, pit from the bottom leaving the top intact or dip fresh cherries, non alcohol, in the chocolate. **If you do NOT pit the Cherries be sure your guests are aware of the PITS!
  5. Store in the refrigerator when not serving.
A Note from NeeCee:
The Cherry Vodka Bombs are very potent...You may want to limit your consumption. This recipe is for the 21 & Over crowd.


  • Serve with special cocktails or as a dessert treat! 
  • These may also be served in drinks without the chocolate. 
  • Frozen without Chocolate served in Drinks will keep your Cocktails cold, giving you a chance to savor the infused cherry when the drink is finished!

Cherry Vodka Infused Birthday Cake...

Recently, I posted my recipe for Cherry Infused Vodka (see here). This is the first recipe I made with the Cherry Vodka. A dear friend of mine was celebrating her birthday and I designed a recipe just for her! It was so good, I should have made two! 
 Cherry Vodka Infused Birthday Cake:

Read all instructions before starting, as there are a few steps to follow.

  • 1 box of White cake mix, one with pudding added in the mix, follow the ingredient directions on the box...see mine below:
  • Egg whites (3), Oil (1/2 cup) & water (1 1/14 cups) according to my box
  • 1 heaping tablespoon of vanilla powder (or 1 tablespoon of Clear vanilla liquid)
Mix well and bake according to the directions on the box. Let cool 20 minutes then turn out onto a cake plate to decorate.

Next;

Cherry Pie Filing:

  • 1/2 can of Cherry Pie filling. Place in a blender and puree. *Freeze the other half to use at another time.
  • 1/2 cup of Cherry infused Vodka
  • 1/4 cup of Karo Clear Syrup
  • 1 heaping tablespoon of cornstarch
In a sauce pan, stir together the Clear Syrup. Cherry Vodka & pureed Cherry Pie Filling. Blend well over a medium heat. Slowly add the cornstarch using a sifter. Stirring constantly, blend well and bring to a low boil to thicken. Let cool.

Next:
I used a can of pre made butter cream frosting, except I blended in a heaping teaspoon of vanilla powder, a pinch of salt and a tablespoon of soft butter! This lends a homemade creamier taste.

Next:
Poke holes in the top of the cooled cake. Pour 1/4 cup of Cherry Vodka over the top of  the cake. It will soak in quickly.

Frosting the Cake:

  • I frosted the sides and around the top edges of the cake. This leaves room for the pie filling mixture.
  • Gently spoon the cooled pie filling mixture inside the frosting well. I added a dollop of frosting in the center and placed a single cherry with its stem on top!
  • This cake should be refrigerated before & after serving, due to the pie filling

This cake was very moist and was very well received! Everyone raved about it! I only wish I had made 2 cakes! It was that Good! And, the Birthday Girl was very Happy!

HomeMade Cherry Vodka...

Oh My...when I saw our first crop of cherries on our little tree.....Recipes danced in my head!
I decided to make Cherry Vodka first, especially after the first sweet taste of the cherries!
The reason why???
We have a full weekend soon full of several celebrations for graduations, birthdays & of course Father's day! I love to concoct new recipes ... Enjoy...Xo, NeeCee
Oh...this is looking GOOD! Mmmm...infused Desserts, Sauces, Butters. Teas, ....NOT to mention the Cosmopolitans and Cherry Martini's or Margarita's! Oh MY!

Cherry Vodka

  • 1 bottle of 750ml (plain) Vodka
  • 4 cups of fresh cherries; remove stems,  pitted & washed
  • *( I had large cherries on my tree, you may want to add more..fill the jar about 3/4 full with prepared cherries)

Instructions:
1. One large Mason jar, 3 pint size (or another sealed glass container)
2. Place the prepared cherries in the bottom of the large infusion jar
3. Pour the all of the Vodka over the top, 750ml
4. Seal with the jar lid
5. Let the vodka & fruit infuse for 5-7 days in a dark area on the counter. No direct sunlight.
6. Gently shake the jar regularly, throughout the mentioned days, to help infuse. Tasting if you wish, continue this process until you have right the intensity of the cherry flavor you desire.
7. When Vodka is ready; Strain the liquid into a clean jar, seal and refrigerate.

Steeping the Cherries in this way adds a sweetness, yet a little tartness to the Vodka.  Wonderful for Cocktails and recipes, while impressing your guests!

 AND, don't forget to use your alcohol induced cherries for garnishes...AWESOME!

Vodka Infused Strawberry Shortcake...

It was dice night with the girls....I was making the dessert! I had a package of strawberries that needed to be used...Mmmm...Strawberry Shortcake, Infused with Vodka Strawberry Syrup...Yep... sounded wonderful! I love to create new recipes and this one turned out...AmaZinG!
 Vodka Infused Strawberry Shortcake:

  • 1 box of yellow Cake Mix...follow the directions on the box. I used a sugar free mix, 2 eggs, oil and instead of 1 cup of water, I used Iced Cake Vodka. Plain vodka would work just fine. I prepared the cake pan; greased and coated with sugar. 
  • Wash and slice 1 1/2 cups of strawberries

*Mix the cake as directed with the ingredients as called for, replacing the water with vodka in equal measurements. Blend well.

*Pour 1/2 the batter into the prepared cake pan, layer with the fresh, sliced strawberries. Pour the remaining batter over the top and place in the preheated oven.

*Bake according to the boxes directions. After removing the cake from the oven let set for 15-20 minutes, then turn out of the pan onto a cake plate.

While the Cake is baking, prepare the topping as follows....

Strawberry Vodka Syrup:

*In a sauce pan, place the ingredients according to the directions

  • 1/4 cup of vodka, flavored or plain
  • 1/4 cup of sugar
  • 1 teaspoon of cornstarch
  • 1/2 teaspoon of lemon juice
Cook ingredients over medium heat until it starts to blend & boil. Reduce to low and cook until the sugar is dissolved and the syrup has thickened. NEXT....

  • Add 1 1/2 cups of washed & sliced strawberries, fold in gently
Set aside to slightly cool...about 5-10 minutes

* Poke the cooled cake in several places around the top with a wooden skewer. This will allow the infused syrup to filter through the cake.

*With a large spoon, ladle the syrup and berries over the top of the cake. Let it soak in, don't rush it.
Any additional syrup may be served with the cake, simply drizzle over the cut piece and add a dollop of whip cream.

**Extra Syrup may also be reserved & used for pancakes, pound cakes, ice-cream, infused iced teas, punches and more....

***The Alcohol will cook out of the cake leaving a unique & moist taste behind.
