Cheesy Crab Dip & a Note from NeeCee

Obviously I am not able to do a complete post from my Computer. Even though I have had it in the shop many,many times...!!! Thank you for being patient....YES the computer is home...NO it is not working right YET!

We have tons of recipes and other subjects posted on this site...Please feel free to toggle around and enjoy....Im also working on a Cookbook, my goal is to have it ready by the end of the year....

Cheesy Crab Dip...

Crab Dip....Great for the Holidays!
Every year some friends drop by with fresh crab to add to our holiday meals.
LOVE, LOVE, LOVE it! Thank you, Thank, you Jason & Jodi...
We love eating fresh crab with cocktail sauce or drawn butter! But I also love to save a little left over for a recipe or two. This year I made Crab Dip! It was amazing...and it's not just me saying that!
The few who tried it, raved about it!
Cheesy Crab Dip
1 brick of cream cheese, softened
1 package of Sharp Cheddar Cheese, Shredded (about 2 cups)
1 cup of shaved parmesan cheese
1 cup of sour cream
1 jar of marinated artichokes hearts, drained, leaves removed & cut into small chunks
1 heaping tablespoon of capers, drain
1 teaspoon of dehydrated galic
Celery salt & Black pepper, season to taste
1 fresh cooked crab, cleaned and shred into pieces
Mix well, Bake in a prepared small casserole dish at 350 degrees for 30 minutes.
Cover with foil if needed the last 10 minutes.
Serve with a small sourdough loaf of sliced bread...slightly warmed.
Or Crackers!...Mmmm, maybe just with a spoon!!!
I was told by one of my tasters..." If there were a table full of Crab Dips...this would be the one to EAT, Hands Down!"
Now that's a compliment! Hubby chimed in to report this was the BEST he's ever eaten, put's others to shame!!!
Give it a try....The ingredients are so simple! Most items are probably already in your pantry/fridge.

Note from NeeCee...

Just a quick note....my computer had an issue due to a computer update... long story short, Best Buy was able to fix the problem after three hours today...I apoligize for posts being delayed... I will have a new post tomorrow morning....Thank you for understanding....New recipe tomorrow, BUT for now.... Signing off for a much needed rest from the stress...Night All :)

Where's Waldo??? Opps, I meant NeeCee!...

...Snap, Crackle, Pop....Nope, not my cereal... MY FOOT!

HI....I'm back! Sorry....been a little crazy busy! Almost 3 weeks ago...I got out of bed and PAIN shot through my foot! What the heck????  Out of the BLUE....(Well not really...Been having problems with my foot for a while...But jumping through all the hoops wasn't working..obviously!)  So, thank goodness, Ornery was home and we went to Urgent care...I thought I had broken my FOOT!
 The adventures of the traveling shoe/s! Haha...had to do something to entertain my self through this.... :)))
 This was the 1st week!.....So now that it is all said and done... (haha I laugh!) YES, it is a torn ligament in the Plantar Plate of my right foot! AND, a inflamed nerve...It's HUGE I might add! ...caused by my Joint syndrome and my lower back! So now I go back to the surgeon in a month, had a cortisone shot/s in my foot...the new brace is on for at least a week or two. (This is the 3rd brace!)....Waiting on a call from a (NEW) Back Doctor! Yikes!!!!  Months of recovery.... :S
 Hey....The Queen of Bling has to keep up her appearance! heehee....
 I was a little teed off to say the least.....there were places to go and things to do!
 This kinda pushed things over the edge! I came home from the 2nd Doc's office ...ONLY to have an Old Lady Shoe catalog in the Mail!!! ( Disappointingly...I did see a couple of cute pairs of Shoes! Oh Crap...did I say that out loud???) Yikes!!!!
We had plans to go to Disneyland with the Family for Easter....So we loaded up Nana...AND we went! YUP we did...Wheelchair and ALL! Oh & Easter Baskets too!
 So thankful for wheelchairs....They put us on the TOP floor!....
Ate dinner at Joe's Crap Shack the first night Yum...so good we went back the last night too!

Excited to see that they were supporting Autism Speaks! Of course we made a donation...this is for our three boys Sarah (Super Mama)! You too Kerry Magro....you are awesome!

A fun time...and a different Easter than usual...Haha.....All my photo shots were from wheelchair level! Oh well....it was fun and we were tired!
So I am sort of rested... and sporting a new boot! Hope we get some answers soon...Hoping the shots work and I don't need surgery! Once again....Sorry the post was postponed for a few days!

Jewelry & Basketball?...

One of our 7 granddaughters was recently recruited to play on a travel basketball team. Fundraisers are often crucial to the financial success of Sports Clubs.  HayBug need to contribute something to the fundraiser....So Nana's phone rang!!! LOL.... At least she likes her Granny's Jewelry Designs!

Any way...Here are the two latest jewelry designs....
 A vintage Sugar Spoon was the backdrop of the necklace, a faux heart shade clock and a pearl don the necklace. The earrings were made to mated. A New look with some vintage style.
The second set included Brass findings & Pearls...Simplistic & Timeless Style....

I think these will do just fine at the basketball fundraiser! Speaking of donations...TJ Maxx is hosting it's yearly "Autism Speaks" donation fundraiser. I was in the Redding store (YES, again)! And once again, I donated to this cause, soooo close to my heart! ....Sarah...This is for you, Jim & the boys! xoxo!....
For you too Kerry Magro.....A National Motivational Speaker on Autism...check out his Facebook page under his name! You may also want to read the article about Kerry I wrote & posted on the blog...here! His Life's Journey has taken him down many roads in his young life! You will be hearing more about him & his amazing journey for years to come! He introduced himself to me via email and through my blog, when I first started blogging. He had sent me a wonderful note, congratulating me for winning the "Top 115 Parenting Blog Award" from eColleges (You will find this award posted on my blog page...here & here)....So sweet, So kind Kerry!

Happy Birthday PineCreekStyle...

Happy Birthday to Pine Creel Style....
Three years ago today we launched our Blog! A lot has happened and changed since we started. We have enjoyed it all along the way...So glad we are able to share with you too! We started this blog as a way to share our recipes with family and friends....AND... along the way, we gathered even more friends!
What a blessing! Thank you everyone, you've made this a special birthday...

Mushroom & Spinach Omelet...

Omelet's are like  Left Over Soups you create...You can throw just about anything in them, and it will be awesome! Well...here is our latest Open & Dump Omelet...I have had a Mother Hubbard cupboard lately. No time to run to the store. Supplies were running low. This omelet was very good.
Mushroom & Spinach Omelet
Ingredients are based on 2 omelets:


  • Use 2-3 eggs per omelet
  • 1/2 package of sliced  fresh mushrooms, sautéed
  • 2 cups of fresh spinach, divided
  • 1-2 slices of cooked ham , cubed/diced and divided
  • 1 cup of parmesan cheese, grated & divided
  • 4 tablespoons butter, divided for cooking of omelet @1 tablespoon each & 1 tablespoon for sautéing the mushrooms
  • Seasonings, *I use my Pine Creek seasoning (see the recipe)

Instructions:


  • Prepare & ready all of the ingredients for cooking and assembly of the omelet; sautéing, cutting, grating, etc.
  • Cook the eggs in an omelet pan or small sauce pan, use 1 tablespoon of butter to cook the omelet/eggs
  • When the eggs start to form, add the sautéed mushrooms, fresh spinach, grated cheese and ham pieces with the seasonings
  • When cooked, fold the omelet and slide onto your plate & serve

Yumm...a great Weekend Breakfast or Dinner ...Serve it up with Style...

Just a couple more days and we will be back to our normal posting routine! The computer repair and data transfer took longer than predicted ! (:sFrustrating to say the least!)

Our New Look is Coming Soon...

Our New Look is about to revealed....

Recently, We engaged a Web Designer to help us refresh our Blog. Below is the design Brooke at Uplifted Design presented to us.  Hubby & I approved the look right away! We loved that she listened to our wants & needs. We really wanted to appeal to both Men & Women. We were pretty happy with the new design and hope you are too! We would love to hear your comments....

Along with the New Design are the new Labels...Each Label has a description about that section and what you will find there.  The "About Us" section has already been refurbished and you will learn more "About Us" than maybe you want to know! Ha ha! And... How Hubby got his moniker... "Ornery"! His preferred nickname...

"Home" of course will take you to the current Home Page.

"The Recipes" will explain our style of cooking and why... As you know we do a lot of Semi-Homemade for the convenience of a busy life style. there are a few recipes that will be more detailed. And of course, we will share our Branding, Ranch & Celebrations too!

"Cooking & Household Charts" will be the place to go for Measurement Charts, Cooking Terms, Baking times, Kitchen List of Essentials & such....

"The Opinionated Palate" is a positive side of our Opinions...Whatever it might be....It's also a place to post any Foodie Faux Pas! And YES, They DO happen! You never know WHAT we may post here!

"The Table & Such" will cover anything & everything between TableScapes and Parties of any kind!

"The Ranch Life" is just that, Life on the Ranch. Lots of photos, a few posts & recipes about  Ranch Life in general.

And of course the "Terms/Disclosure & Contact" Labels are still the same.

The Face Book Page will basically stay the same...so you will want to check there often. You will find, food, crafts, furniture redo, opinions & remarks from me...NeeCee! You never know when I will pop in over there to add something NEW! And, yes the posts from the Blog will post there also....

Keep in mind we will be busy converting all of our posts in order to work with the new program. It will take some time, unfortunately there is no easy way to make the switch over. So I ask for your patience. If you need a recipe and you can't find it, please message or email me and I will send it to you. Thank you in advance for understanding.

Christmas is Coming.... What???


Christmas is coming, the goose is getting fat...
Okay...Shrieking  HALT!!! WHAT???
Life inter-rupt-US has happened once again! Kinda sort of...
No this is NOT last years photo...YES it IS happening NOW! A CURRENT photo!
Say WHAT??? Yes, I have Christmas stuff out! ALREADY!!!
Here is what happened...
Daughter Tara has a BLOG, Daughter Tara is going PUBLIC with the BLOG! Daughter Tara has TheTrendyTreehouse.blogspot.com
So because she is going Public...there's a whirlwind of STUFF to DO!
Anyhoo....She called me last Saturday night! She and the "Fam" had had a FAMILY photo Shoot!
"Ummm, MoM? Can YOU decorate EARLY for Christmas? Ummm, WE need to DO a Holiday Photo Shoot!"....My Reply..."Of course..." What else would a MOM say!!! 
So Sunday morning Dad & Mom started hauling the Trees and boxes in the HOUSE!
I had less than a full week to get this DONE!
By Monday night....The house looked like, Halloween, Thanksgiving & Christmas boxes had exploded EVERYWHERE!!!
Up at 5Am...in bed by 10pm....Whew... IN 2 days and I was well into my marathon decorating!
THEN... I SPIED A SKUNK AT MY BACK DOOR!
OMG....I did NOT NEED SKUNK SPRAY EVERYWHERE!
Luckily my kitty's...knew better than to taunt the SKUNK!
Thank Goodness, all went well and the Skunk went along his merry way after he ate ALL the cat food!!!
Whew! OKAY...back to decorating!
On Wednesday...we had a quick photo shoot set for the Kitchen...
I HAD to have EVERYTHING READY! At least in the Kitchen!
Did I mention....WE HAVE A FAMILY WEDDING ON SATURDAY AFTERNOON!!!
SOOO...I had a manicure, pedicure & hair appts to work around!!! WOW....check & check...headed home from the Beauty shop on Wednesday afternoon! Got to the driveway gate! IT WON'T OPEN!!!
Holy Crepes!!! YES, CREPES!
Did I mention...I WAS wearing a DRESS!!!...I had to climb through the gate and look for the hidden wrench! It wasn't hidden... it was MISSING!
DOUBLE CREPES!!!
My cell RANG!!! It was TARA...there had been an accident near the exit and she was stuck in a line of cars! I had just driven through there !
 "A power pole was down!"
 NO WONDER the gate wasn't working!!!
No ELECTRICITY!
A neighbor happened by and help me manually open the gate! 
WHEW!...WHAT next???  Back in the CAR...
Tara finally got through the road closure and to the house...The power came back on about an hour later....
Photo Shoot went smooth...even though it was rushed and dark outside!
We were Exhausted....But finished! YEAH!!!
So with the kitchen done, photo shoot done....I was free to start on the LIVING ROOM TREE!
Yiker's!
So surprisingly...There has been more pro's than con's to this EARLY decorating...
1. We have our annual photo date set for the family Christmas card, now we can have a Christmas shot!

2. No rush (haha) to get things done for the blogs or Christmas shopping & guests arriving for the big day!

3.  Time to rest & relax in between shopping & meal planning!

4. Neighbors & friends will think I've lost my marbles....

5. I will tire of the Christmas Decor!

Just a few of my Dessert offerings...
We had a very busy weekend had of us; the County Fair, a Wedding, 3 of 9 grand kids having a weekend sleep over with Nana & Papa, the Cattle Auction, a granddaughter showing her cow/calf and more....
BUT,

As some of you know, I started my Blog at the request of my children, family & friends who all wanted my recipes recorded!
