Breakfast Bowl...

Breakfast Bowls.... described as "Excellent" by Ornery!  They were every good. This recipe can be easily cut in half to serve one or doubled to serve four....or more!!!! Because we used canned potatoes and fully cooked meat, this breakfast/brunch came together quickly. Stick to your ribs good!

Bruschetta Bagels...

Rising to the challenge of our College granddaughter K-8....I am busily creating and recalculating recipes to fit College students needs. She was in a dorm last year and had a meal ticket! This year, she is in an apartment...with a full kitchen! So....I gave her an uncompleted "CattleQueen Cookbook", with promises of more recipes to follow. Then I loaded her up with homemade cookies, quiche and seasonings as she left for her trek to school in the next state!...Hope some of those cookies made it to the fiancee!
  (YEP...Big news this SUMMER...K-8's engaged! Expanding our family.....WHOOHOO!)

Her requests were for simple, few ingredients and smaller quantities. That being said....Nana jumped right in and started to work! Ham & Zucchini Quiche...

I love a good Quiche! This recipe is simple & the results are always perfect! I did a rustic finish to the edges of the Quiche crust....It didn't need to look perfect, because it tastes perfect! Just a little secret...I do a rustic crust when my rheumatoid arthritis is literally a pain!

Ham & Cheese Quiche
  The Cattle Queen Cooks

Yields: One Quiche

Ingredients:


  • 1 cup of heavy whipping cream
  • 4 eggs, slightly beaten
  • Garlic Pepper to taste
  • 4 slices of bacon, cooked and crumbled
  • 1/2 pound of pork sausage, cooked, crumbled and drained
  • 1/2 medium zucchini, grated and wrapped in a paper towel to absorb the moisture
  • 1 small onion, chopped & saute'd
  • 1 tablespoon of butter, for saute' onions
  • 1 cup of shredded cheddar cheese
  • 1/8 cup of Parmesan grated cheese
  • 1 pie shell
Directions:


  1. Set the oven to 350 degrees
  2. In a pie pan, place one pie shell, finish crust edges as desired, rustic, shaped, fork, etc.
  3. Prick the crust with a fork to vent and set aside.
  4. In a medium bowl, mix together; beaten eggs, garlic pepper, whipping cream, cheddar cheese, cooked sausage and cooked bacon, saute'd onions and prepared zucchini. Mix well.
  5. Pour the egg mixture into the prepared pie crust. 
  6. Sprinkle the parmesan cheese on the top of the egg mixture.
  7. Bake in the oven for 40-50 minutes or until a knife inserted into the cooked center, comes out clean. Let stand for 5 minutes; cut into wedges to serve.
Notes:

Quiche is perfect for Breakfast, Lunch or Dinner...Serve with fruit, a green salad, veggies, etc.

Breakfast Taquito's....

Yummy breakfast the other morning..These Breakfast Taquito's were quick and easy for a busy morning!

 
 I surprised Ornery in his office with a nice hot, easy to eat breakfast! He gave the Taquito's and "excellent" rating!!!

Very easy & quick to put everything together!!!

Peach Strudel...

YES....My trees & the neighbors have lots of peaches....So... here is simple,  quick & easy,  open & dump recipe....Takes moment to whip together using a box mix and a few items....The results...AWESOME! Mix, Bake, toss some flour in your face and serve with a smile! Oh....and a cup of Coffee...Oh yeah!

Peach Strudel...

 Peach Strudel

  • Yields one loaf

Ingredients:

  • 1 box of Cinnamon Swirl Crum Cake (Krusteaz brand)
  • 2/3 cup of water
  • 1 egg
  • 1/2 tablespoon of powdered vanilla
  • 1/2 cup of sliced & diced fresh peaches, drained of juices.
Directions:

  1. Follow the directions on the box
  2. Stir in the powdered vanilla into the cake mixture
  3. When layering, add the peaches in the middle layer first, then add the 1/2 cinnamon strudel mixture, then repeat as directed
  4. Tah...dah....thats it! Bake, Cool and serve!
Notes: 1. I let my loaf cool for 20 minutes then turn out and wrap the semi warm loaf in foil, then seal in a large ziplock bag....Keeps the loaf moist and fresh.
            2. With the remaining peach juice, mix a little powdered sugar with it and create a yummy glaze to drizzle on top! Only if you want over the top decadent taste! :)

 This slices perfect every time!
My tasters.... gave a hearty two thumbs up!!!!

Mini Espresso Breakfast Donuts...

Mama D & I had these delicious little gems for breakfast this morning....They were YUMMY!

Ingredients:


  • 1 cup of German Chocolate Cake Mix
  • 1 cup of Bisquick mix
  • 1/4 cup of sugar
  • 1/2 teaspoon of salt
  • 3/4 cup of brewed coffee, cooled
  • 2 eggs, beaten
  • 1/4 teaspoon of instant espresso, stir into the hot coffee, then cool
  • *Glaze: use a small amount of Powder sugar with very little water. Just enought to make a thick glaze. Chop 1/4 cup of pecans, fine.
Directions:


  1. Mix together all Ingredients, except the glaze, blend well
  2. Prepare donut pans with cooking spray and fill wells equally, half full+
  3. Bake for 8-10 minutes at 325 degrees in a preheated oven
  4. Make the glaze whiledonuts are cooking.
  5. After the donuts are cooked, let cool for five minutes. then turn out of the pan.
  6. While donuts are still warm, drizzle on the glaze and sprinkle with nuts.


Yields : 12-18 mini donuts depending on your pan size. (My decorative, mini donut pan, made 18 mini, fat donuts.)

Tex-Mex Toast for Breakfast

Ingredients:
 Per Serving...
Directions:
  1. Grill the toast on a flat iron or use a toaster. On a flat iron I butter the bread and season with garlic pepper (or use my Pine Creek Ranch Seasoning, seen here)
  2. Spread the Guacamole on the toasted bread, as you would with jam
  3. Next, place a cooked "Over Easy" Egg on top
  4. Garnish with tomato relish & serve

Eggs over Easy, Country Style: Two Chicks on a Raft in a Sea of Gravy...

This is Down Home Country Cook'n...Two eggs over easy on Sour dough toast, smothered in Country Gravy. What is better than good ole homestyle cook'n? Mmmmm...nothing...This is Comfort Food!

This is simple, yet homestyle awesome!

Two chicks on a Raft in a Sea of Gravy

Recipe is based on One serving
Ingredients:

  • One large or two regular pieces of toasted sour Dough Bread, buttered
  • 2 Over Easy Eggs, cooked & hot
  • 1/2 Cup of Country Gravy (see recipe here)
Assembly:
  1. Lay the butter toast on a large plate
  2. Add the cooked Over Easy Eggs
  3. Pour the Gravy over the top of everything
  4. Break the center of the egg yolks and let bleed through the gravy mixture
  5. and Serve! MMMmmm, Yumminess.....

Country Gravy w/Bacon...

Talk about the ultimate comfort food...Country Gravy w/Bacon...Heaven on a plate!
Country Gravy with Bacon

No Lumps Gravy!!!  Please read the notes section below for extra tips...

Ingredients:
   ***This recipe doubles well!

  • 6-8 pieces of Bacon, cooked crisp and crumbed...set aside, reserve 2 tablespoons of bacon grease
  • 1/3 cup of white flour, *plus more if needed when cooking to thicken
  • 3-4 cups of heavy whipping cream, more if needed. This also helps to make a thicker, creamy gravy
  • 2 tablespoons of butter
  • PineCreek Ranch Seasoning (Recipe here) or Garlic Pepper, to taste
  • Additional black pepper to taste or kick it up a notch and use (lightly) red pepper...
  • 1 to 2 tablespoons of bacon grease
  • 1 tablespoon of minced dehydrated galic flakes
Directions:

  1. In a large measuring pitcher or bowl combine: *Heavy Whipping Cream, Flour, Seasonings, Bacon grease and Garlic flakes, mix well with a wire whip
  2. Pour the cream mixture into a sauce pan and cook over medium heat high heat, constantly stirring, *When it thickens reduce heat to medium/medium low let simmer
  3. Stir in the butter and whip gently to blend
  4. Add the crumbled Bacon and stir gently
Notes: -If needed, stir in more flour as needed, *I sift mine into the pand to prevent lumps
I have also used store bought country gravy packets in replacement of the flour measurement. this works well. (There are times I don't have flour or I dont want to carry extra flour to the summer ranch...The gravy packets are the perfect answer!)
-Mixing the flour, seasonings & whipping cream together before pouring into the sauce pan keeps your gravy lump free. The whipping cream does two things, it thickens faster and the results are creamy. I use Whipping Cream because it has a longer (self/fridge) life than milk, works well when you live in the country...
-You may replace sausage for the bacon...I would use about a half of a pound or so...Cook the meat separate from the gravy and drain grease well. Stir in after gravy has thickened.
-And lastly... You may want to add a 3/4 cup of onions, sautéed or not, depending on taste.

Too make life easy and serve breakfast quicker, use canned biscuits. I do this if I am cooking for a large crowd. I like the Buttermilk Grands or the HomeStyle biscuits.
But...My fave is to make Cowboy Toast! Buttered & Grilled Sourdough bread on a griddle...Mmmm good! Bring on the Gravy!

Breakfast Served 4 Ways...for Kids, Big & Small

We made these for breakfast this morning...We, being myself & two granddaughters! These were such a big hit that we made them four ways! Every one of them was awesome. For little and & big kids alike...


The recipe is written for each adaption... PineCreekStyle

Cinnamon Toast Stix's:
 *Based on 12 sticks


  • 12 slices of fresh white sandwich bread, crust's removed
  • flatten each square with a rolling pin
  • roll up into a round stick
  • dip into melted butter (about 3-4 tablespoons ), covering all sides
  • roll into mixed cinnamon sugar, about 1/4 cup or so
Bake at 350 degrees for 16-20 minutes & serve


Churro's w/ Cream Cheese Filling:


  • 1 loaf of white sandwich bread, sliced and crust removed
  • 8 ounce's of soften cream cheese
  • 1/2 cup of powder sugar
  • 1/4 cup of brown sugar
  • dash of cinnamon
  • cinnamon & sugar mixed, about 3/4 cup, for dusting
  • 1 cube of butter, melted
Directions:

  1. Remove crusts and flatten each slice of bread with a rolling pin.
  2. Mix the Cream Cheese, powdered sugar and brown sugar w/ a dash of cinnamon together until blended.
  3. Spread the cream cheese mixture onto each slice of flattened bread.
  4. Roll into a long tube shape
  5. Dip the bread roll in to the melted butter to coat all sides.
  6. Roll in  the Cinnamon Sugar mixture to coat
Bake at 350 degrees for 16-20 minutes....

P B & J Sticks:
**Follow the same process as the Churro's, except line #2. See instructions below...

  • Line #2: Spread a layer of peanut butter, then spread a layer of jelly or jam...*Thin layers work best for rolling
  • Follow the remaing instructions for the Churro's
Serve with Powder sugar spinkled on top, *optional

French Toast Sticks

*Follow the same process as the Cinnamon Sticks above, except...delete the melted butter. See the remaining directions below:

  • Use a full loaf of sliced bread, crusts removed and flattened
  • Roll the bread slices into sticks
  • Dip the bread rolls into: an egg wash , recipe as follows...2-3 eggs, scrambled, a splash of milk and a dash of vanilla. Cover the entire roll with the egg wash
  • gently roll the egg washed bread into the cinnamon sugar mixture (about 3/4 cup needed)
  • Place on a prepared baking sheet
  • Bake at 350 degrees for about 20 minutes more or less
Serve with syurp or powdered sugar


Great fun to make with the kids too!

Sometimes simple is more....This breakfast is fast, easy and it looks as great as it tastes....
Tater's Over Easy

Ingredients:
    Serves two

  • 1 baked potato , sliced in half, fully cooked
  • 2 eggs, cooked over easy
  • 1/4 cup grated cheddar cheese, divided
  • Garlic Salt & Pepper
  • Butter & olive oil for cooking
Diections:

  1. Place botth halves of the cooked potato face down on a griddle or fry pan, fry using olive oil
  2. Fry til crispy & flip to cook the skin side side till heated through. Season the potato with seasonings. Sprinkle the grated cheese on top of the fried poato. 
  3. Cook both eggs over easy in butter and top the potato halves with one egg, each.
  4. Serve immediatly
It's a great presentation for a simple & quick breakfast...garnish with sides of fruit or sliced tomatoes

Ranch Beans & Bacon Omelet...

So easy and so tasty...this omelet is great for Sunday Brunch!

Recipe based on one Omelet

Ingredients:

  • 2 or 3 Eggs, scrambled
  • 2 pieces of cooked bacon, diced
  • 3 heaping tablespoons of ranch beans
  • 1/4 of an onion, sauteed
  • 1/2 cup of cheddar cheese, shredded
  • chives for garnish
Directions:

  1. Place the scrambled eggs in a frying pan and cook
  2. As the eggs start to set up, add the beans & cooked bacon
  3. Add the cheese & cooked onion
  4. When cooked flip half of the egg on top (like a taco), then turn out onto the dish folding the ends underneath. Garnish with chives and serve....

Bacon & Avocado Breakfst Sandwich...

This Sandwich is like an adult grilled cheese for breakfast. Mmmm good!
Bacon & Avocado Breakfast Sandwich

Recipe based on one sandwich

Ingredients:

  • 1 egg, fried or scrambled
  • 2-3 pieces of cooked bacon
  • 1/2 of an avocado , peeled and sliced
  • Cheddar Cheese, 2-3 large slices
  • Salt & Pepper, scant amount
  • 2 slices of Sourdough bread
  • Butter, small amount
  • Garlic Salt & Parmesan Cheese crumbles


Directions:

  1. On one side of bread; layer cheese, eggs, bacon, avocado and cheese again.
  2. Season with Salt & pepper
  3. Place the other bread slice on top
  4. Lightly butter on one side of the bread, place the buttered side down on the pan/griddle side to toast
  5. Flip when cooked and repeat on the other side.
  6. You may season the toasted bread lightly with Garlic Salt & Parmesan Cheese and flip both sides again, slightly browning the parmesan cheese

Salmon Breakfast Sandwich, Gourmet Style...

This Gourmet Sandwich was amazing, it would be perfect for Breakfast, Brunch or Lunch....
Salmon Breakfast Sandwich

Ingredients:

  • 1 sheet of Puff Party, cut in fourths see directions below
  • Small amount of butter, melted to brush the tops of the uncooked pastry
  • Scant amount of garic salt & pepper, sprinke on top of the uncooked pastry
  • Scant amount of grated parmesan 
  • 1 fried egg per sanwich, runny/soft yolk
  • 1 package of fresh smoked salmon, divided in fourths
  • Capers, desired amount per sandwich
  • Hollandaise sauce, I used Knoor's brand and followed the directions on the package, divide into four equal rations
Directions:

  1. Bake the Puff pastry according to the directions on the bos, brush melted butter on top and sprinkle the tops with seasonings and parmesan. Bake and set aside. After cooled divide each puff pastry in half. set aside until assembly.
  2. Fry one egg per sandwich, we like over easy style...*The yolk is wonderful mixed with  all the other ingredients. **Your preference on the cooked egg
  3. Have the Hollandaise sauce cooked and on simmer...use it to assemble and drizzle over the finished sandwich
  4. Have the press salmon, prepared to layer for assembly
  5. Assembly of Sandwich: On the bottom of the puff pastry, add a talespoon og Hollandaise sauce. Next layer the salmond, and egg, adding more Holandaise sauce over each layer. Place the top of the puff pastry on top and drizzle with Hollandaise sauce. Garnish with Capers and Serve.

A beautiful presentation! You will get tons of Ohhh's & Ahhh's, before, during and after serving these gems! Years 4 Sandwiches....Be sure to serve with forks and knives...
They are delicate, but delectible! Two thumbs up!
