Pizza Pockets...

These little gems were so easy and quick! After a long busy day, these hit the spot!
 Pizza Pockets:

Ingredients:

  • 1 package of cressant rolls (8)
  • 1 Package of peperoni
  • 4 mozzerella cheese sticks, cut in half
  • Black olives
  • Small amount of shredded cheddar cheese, about a cup or less
  • Garlic salt to taste
  • Dipping sauce, drizzle a small amount on top, see the recipe below
Directions:

  1. Roll out the croissant rolls flat on a prepared baking sheet
  2. Preheat the oven to 350 degrees
  3. On each roll; place some cheddar cheese, one half of a mozzarella stick, pepperoni. olives & and garlic salt to taste
  4. Drizzle a small amount of the dipping sauce and roll closed
  5. Bake according to the directions on the cressant roll can...mine called for 10-12 mintes
Dipping Sauce:

  • 1 small can of prepared (ready to eat) tomato soup
  • 1/2 cup of cheese sauce (dip, found in the Chip isle)
  • Garlic salt or garlic pepper to taste.
Blend the ingredients together and heat until warm....Use for the inside of the pizza pockets and as dipping sauce.
These were the perfect ending to a long & tired day! It's a great meal to serve the kids and grandkids, and they love to help make them! Chew, Eat, Repeat...

Cranberry Chili Sauce for Meat...

Oh MY Gosh....One taste of this sauce is like heaven to the tastebuds! Kid you NOT! The very first bite of our Meatballs soaked in this Cranberry Chili Sauce was home cooking bliss! The cranberry is mild yet tangy...mixed with the chili ...it was just the right amount of spicy,  with a light sweet taste! The perfect blend.....       This recipe is so simple, yet BIG on taste!
Cranberry Chili Sauce for Meat...

1 Jar of Chili Sauce, *I use Heinz Chili Sauce
1 package of dry brown gravy, (do not add water), I used Knorr's brand
4 ounces of cranberry sauce *(I opened a large can & froze the remaining cranberry sauce for later use)
1/2 cup of water (add more water if needed, in small amounts)
Lightly season with Pine Creek Seasoning (recipe here) or garlic pepper
2 tablespoons of Soy Sauce
2 green onions sliced thin, reserve and fold in after sauce has blended and melded together.

Place all ingredients in a sauce pan, blend with a wire whip/whisk, cook until heated through.
Stir in the green onions, then add your cooked meat: meatballs, cocktail weenies, sausages completely,  covering the meat with the sauce....OR...Brush on sauce for ribs & chicken....
*(I used my meatloaf recipe for the meatballs, (see the recipe here)
So Easy & Simple....The taste is amazing! You may want to double your recipe!
Ornery & I took ONE bite and knew we had a WINNING Recipe!

Where did I get this recipe idea? A very good friend...Dave S., had posted a recipe on my personal Facebook page....It looked & sounded amazing...BUT I didn't have all the ingredients on hand! Sooo... I went to my "Mother Hubbard Cupboard" and started pulling things out....And the recipe was born!
Thanks Dave for the great idea! PS...This was so good I was messaging Dave the minute we finished dinner! YES...Teasing him....Now, I owe him a taste of the next batch!.... heehee

Hot Dog Salad...

YES...Hot Dog Salad... Ornery & Myself are doing great sticking to our current diet...BUT we LOVE Hot Dogs! Well that's what we were craving...So I suggested BUN-LESS Hot Dogs for lunch! They were AMAZING! Sometimes the simplest foods taste the BEST! Take a look....
 Hot Dog Salad....
Ingredients are based per Salad

Small amount of lettuce for the base of the salad
1/2 Small tomato, sliced and cut
1/2 avocado, sliced and chopped
1/2 grilled onion, sliced
Cheddar Cheese, grated, sprinkle on your choice amount
1 got dog, grilled & hot
Garnish with Thousand Island Dressing, chives and garlic powder
Season with Salt & Pepper
It's soooo good! If a hamburger can go bun-less ( such as protein wraps)...Then WHY not a HotDog too!

Linguica Sandwiches w/ Brown Sugared Onions

 So quick and easy, lunch will be ready fast!
You will need:
Two large Linguica Sausages, cut in half, then slice length-wise in half again. Yielding 4 pieces per sausage.
1 small-medium Onion, peel and slice to saute'
Sourdough buns, 4
Prepared Mustard
Brown Sugar 
Butter  
Garlic Pepper
In a small fry pan, saute' sliced onions in 2 tablespoons of butter and 1/8 cup of brown sugar. Season with garlic pepper. Saute' over medium heat until done.
 Cook your sausage in a frying pan on low, turning several times. Browning on both sides. until done.
Bread could be warmed slightly in a microwave for about 30 seconds. Or, butter bread and season lightly with garlic salt and broil until browned. Watch closely.
 Assemble: Bun, add mustard, brown sugar onions, then 2 pieces of sausage.
The brown sugar adds great flavor to the sandwich. A simple lunch prepared fast. Tasty too! Yields: 4

Loaded Tostada's...

These Loaded Tostada's are easy to fix and yummy to eat.  They may be served as a Tostada Bar, having guest's help themselves. Or assembled and served.

Loaded Tostada's
Prepare everything you can ahead of time, including serving dishes. This will make assembly run smooth and quickly. Whether it is you or your guests dishing it up!
(My recipe serves 6-8 people)

1 pound of hamburger, cooked and crumbled (re-heat before serving)
1 large tin of re-fried beads ( *I add a little bit of water to give them a smooth texture, for easy spreading on the tortilla.) Heat just before serving according to the directions on the can.
1 jar of cheese sauce, slightly heated
1 jar of jalapeno's
1 bag of shredded mexican cheese
1 bag of corn tortilla's, fried in hot oil just before assembling, allow 2 per person
fresh tomato's, diced (if you seed them first, they won't be watery)
3 stalks of green onion, sliced 
 2 cans of sliced black olives, drained
2-3 ripe avocado's, mash in a bowl, season with garlic pepper and a squirt of lime or lemon
1 jar of salsa, your choice
1 container of sour cream
1 bottle of hot sauce

Assembly of Tostada's:
Have all of your ingredients ready......lined up for easy access 
On a plate, place first tortilla and spread with beans and cheese,
Next, place second tortilla on top, repeat as above, 
Then start layering tortilla's with the rest of your ingredients.
Tomatoes, Onions, Olives, Jalapenos...
Top with avocado and sour cream, drizzle with cheese sauce,
splash of hot sauce!
