Bean's & Biscuit's
You can't get much better on a cold rainy night than comfort food.
This is an Open & Dump recipe that came together quick. It would be a great meal for the busy nights ahead.

1 large can of Ranch Style Beans
2 small cans of White beans
1 can of White Kidney beans
1 can of diced fire roasted tomatoes
1 can of cheddar cheese soup
1 package of Enchilada spice mix
3 sausages, I used Habenero sausage, quartered and sliced.
Open all the cans, dump into a stock pot. Do not drain the beans. Add the cut sausage. Turn the burner on medium. Stir & mix.

Looks good, but need to kick it up a bit.

Worcestershire pepper to taste.
Add a little liquid Worcestershire sauce, to taste.
Drizzle Chipotle hot sauce, to taste.
Mix together and cook on medium for about 1/2 hour. Or until heated through.
It really was good and the seasoning was just right!
This recipe got a thumbs up from the hubby!
Serve with Cheese and Chives Biscuits listed below.
Cheese & Chives Biscuits
This is a quick Bisquick recipe made while the beans were cooking.
Preheat oven to 450 degrees
21/4 cups of original Bisquick
2/3 cup of milk (I used Buttermilk)
A sprinkle of garlic pepper
1 cup of cheddar cheese
1 tablespoon of freeze dried chives
Mix together to form dough
Knead about 10 times, sprinkle with more Bisquick if needed
Bake for 8-10 minutes until golden brown.
Adding the buttermilk
Roll, Pat and Press...
Ready to eat!
Chipotle Butter
A great compliment to the biscuits is homemade flavored butters.
2 cubes of soften butter
Chipotle Sauce to taste
1 tablespoon of chives, freeze dried, optional
Garlic pepper or Worcestershire pepper to taste
Mix ingredients together, blending well
May be kept in refrigerator or frozen in molds, bowls or cubed forms and sliced
*This butter is also good served on top of grilled steaks
