These Green Deviled Eggs are awesome. A nice change from the usual Deviled Egg.
Avocado Stuffed Devil Eggs....Amazingly Good & Simple...
(I made some regular Deviled Eggs too)
Avocado Stuffed Deviled Egg Recipe...
1 dozen eggs, peeled, cut in half..separate yolks and set aside the whites, (boiled *or baked see this POST), mash yolks with a fork.
1-2 Avocado/s, peeled and mashed with the egg yolks.
Garlic Pepper, Mexican Chili, & Cumin, season to taste about 1/8 teaspoon or less of each. *It's YOUR taste preference.
A pinch of Salt
Chives; dried, 1 heaping teaspoon
Lime (or Lemon) juice , heavy squirt to help keep from turning brown.
Cilantro Pesto....1 heaping tablespoon, blend in the egg yolk mixture.
Mix well and fill the egg halves, best served the same or next day due to the avocado browning.
Paprika or Mexican chili for garnish on top!
Add a heaping tablespoon of the Cilantro Pesto to the mashed egg yolks.
Add the Avocado and mash...
Add Lemon or lime juice (a healthy squirt will do) to help prevent browning....
Add spices and blend well...
Mix and Fill your Egg halves.....
A great addition to your St. Patty's day menu's!
