It was Dice Night with the Girls last night....I had been craving an upside down pineapple cake!
A New Recipe popped in my head and the baking began...
NOT your average run-of the mill upside down cake!!!
This cake was very moist and bursting with flavor.
The Dice Girls loved it!
The Cake definitely has the "WOW, that's GOOD" factor!
The Recipe:
Pineapple Pecan Rum Cake
Your Favorite Yellow Cake mix, I used Sugar Free
*Make the cake according to the directions on the box, eggs and oil but instead of water use: 1/2 pineapple juice & 1/2 rum.
My Mix called for 3 eggs, 1/3 cup of oil and 1 cup of liquid (water), I replace the water with the juice/rum combo.
In addition to the Cake mix....
Add one can of crushed pineapple, drained
1/2 cup of chopped pecans
1 package of instant Lemon jello pudding, I used sugar free.
Blend everything together, place in a grease baking pan that has been sugared.
***BEFORE placing the cake in the PAN...Add 1/4 to 1/2 cup of brown sugar (*sugar free), then place pineapple rings on top of the brown sugar...now add the cake batter.(see photos below)
I like to use a little sugar to dust the cake pan instead of flour if I am not frosting the cake. It adds a special touch & taste to the cake!
Preheat the oven according to the cake mix directions...
When done let cool 15-20 minutes before turning out the cake.
Equal parts of pineapple juice & rum replaces the water on the cake mix directions
Place Brown sugar in the sugar dusted cake pan
Add all ingredients to the cake mix...
Blend well...
Place pineapple rings in the bottom of the cake pan...
Add the cake batter....and it's ready for the preheated oven...
Bake according to the cake mix directions on the box.
I placed 3 remaining fresh pineapple rings on top of the cooled cake and added a cherry in the center for a great look!
This cake was heavenly to smell as it was baking...
Simple & Elegant...
Heavenly on the taste buds too!
