Prime Rib Dip

Ingredients:
- 1 3/4 cups of cooked prime rib, sliced thin and diced
- 1 medium onion, sliced and diced
- 1 cup of diced green chilli's, drained
- 8 ounces of softened Cream Cheese
- 1/2 cup of sour cream
- 1 1/2 cups of grated or chopped Jack Cheese
- 1 heaping tablespoon for butter
- Garlic Pepper (see my recipe here) to taste
- Saute the onion in a frying pan with the butter & garlic pepper seasoning
- When the onion is cooked, toss on the green chili's, roast with the onions for a few moments, set aside
- Using the softened cream cheese, blend in the sour cream & jack cheese, mix well
- Next fold in the seasoned sautéed onions & green chili's
- Add the diced prime rib and blend
- Bake at 350 degrees, for about 25-30 minutes
Note: Serve in a hollowed Sourdough Bread bowl for special occasions....
