Prime Rib Enchilada Dinner

Prime Rib Enchilada Dinner
 I love my Prime Rib! And, I love to use every bit of my leftovers!
So here is another favorite recipe from my rerun's (leftover's)....
Prime Rib Enchilada Dinner
 Quick, Easy and Yummy-li-ous!
1 package of Corn tortilla's
1 large family size of grated Mexican Cheese, such as Tillamook
Enchilada Sauce, family size tin...your choice
Mince Garlic, Minces Onion and Cumin, too taste
1 can of Olives, diced or sliced, drained
Sour Cream, 1 heaping teaspoon for the sauce, and reserves for garnish
Green Onions, 2-3, sliced
Prime Rib, cooked, about 3/4-1 pound, sliced & diced
MIX all ingredients except meat, cheese, olives and green onions...
blend sauce well over a low heat
After assembly of enchilada's, Bake at 375 for 25 minutes
 Gather everything for assembling, place a small amount of sauce in the baking dish. Preheat the oven. 
 On the inside of the shell, place meat, green onions & olives
 Add cheese and roll closed...place in a baking pan...repeat
 Assembled and ready to bake....
Ummmm....Ready to eat!
 Dinner is Served....
 Ohhh, this is good!

Fresh Wild Salmon for Dinner...

from the River out back...
Our very good friends went fishing this Labor Day weekend on the Sacramento River, just around the bend from our house!
They (Wendy & Eric) shared some of their catch with us, a 25 pound Wild Salmon. 
Oh My Gosh..., so fresh, so good, so yummy-lious!
 She was a beauty! So glad Wendy & Eric decided to come by the house for a cup of coffee after fishing!
 Eric was happy to show "her" off in a picture.
 Didn't take him long to get her cleaned and ready for dinner...
 With fresh salmon it is best to get it cleaned, washed and stored in the refrigerator for a couple of hours before cooking.
Then...she's ready to cook! Yum, recipe below:
Prepare the salmon as follows. Rinse well with cold water after removing from the refrigerator. Pat dry with a paper towel. Place the salmon steak (*our steak was about 1 1/2 pounds in size), skin side down on a prepared cookie sheet. Dot with butter, @ 1/4 cube of soften butter.
Squeeze some lemon juice on the steak. Sprinkle to taste; dill weed, garlic salt and black pepper. Gently sprinkle on red pepper, careful not TOO much. Less is more. Preheat oven to 450 degrees and bake for 13 minutes. Turn off oven and let rest while you finish dinner preparations. Add capers while steak is resting.
Before serving I drizzled Red Pepper Hollandaise Sauce over the top of the Salmon and added a few french fried onions.  The hollandaise sauce was a prepared package made with butter, milk and a pinch of red pepper.
With the Wild Salmon Steak, I served saute'ed snap peas tossed in garlic & butter. Also, a simple chopped salad with green onions, tomatoes and blue cheese dressing. Season with salt & pepper.

A Signature Dinner w/ Tomato & Cucumber Salad & More,...

There are three recipes in this section....you won't want to miss any of them!
Balsamic Tomato & Cucumber Salad
This was so good on a hot day!
Fresh veggies from my Dad's garden gave me the idea for this delicious salad.
Ingredients:
 One large beefsteak tomato, 1 medium yellow cucumber, chives, mozzarella cheese, balsamic vinegar and olive oil and garlic salt with black pepper.
 I prepared the chilled plate with the balsamic vinegar and olive oil. Tomatoes, cucumbers and cheese were thinly sliced, and ready for assembly.
 Layering the Salad:
Lightly blot the tomatoes and cucumbers with a paper towel. This will help prevent the salad from toppling over. One slice each; tomato, cucumber, cheese and repeat again. *On the second piece of cheese, I tore a thin strip off the cheese and formed a cheese curl. Sprinkle with garlic salt and black table pepper. Sprinkle with chives and serve. **I made four salads with one large tomato and one round cucumber.
 It was a wonderful compliment to the rest of the meal.  *More recipes to follow.
We had warmed the left over *Tri-tip from a previous dinner and made a mushroom & red table wine gravy using one of our favorite wines from
 New Clairvaux Vineyards in Vina, California.
 To complete the dinner I made a whipped mustard cream for the meat, along with some zucchini and yellow squash.  Let's just say... YUM!

Mushroom & Red Table Wine Gravy
 Okay, I ADMIT to having a glass of wine while cooking! There I said IT! With wine this good, WHO wouldn't! Okay, so on with the recipe...

 Mushroom & Red Table Wine Gravy:
One package of Au Jus gravy mix, I used Knorr's. Mix and add as directed on the package. I mix mine in a pitcher before I add to the pan. In a heated pan, melt 2 tablespoons of butter. Cook on medium high, browning the mushrooms.
Reduce heat to a simmer and add the Au Jus. Cook slowly, so the gravy starts to thicken. Add 1/4 cup of red table wine. Simmer, reducing until thick, stirring often. You can see the results! Pour the gravy over the meat. Heat until meat is warmed. Oh my gosh...this was yummy! One more recipe to go....
Whipped Mustard Cream:
You will need; 1 carton of heavy whipping cream, stone ground dijon mustard and black table pepper. Simple to make, but a little planning ahead is required.
 Chill your bowl and beaters, along with the whipping cream and mustard. This will help make a better whipped cream. First, whip the cream in the chilled bowl until the cream starts to thicken. You want it stiff, but don't whip too long or it will make butter! 
(My daughter, Tara @ Trendy Treehouse, made the cream, while I took photos and gave instructions. She has a new favorite recipe!)
 It doesn't take long at all, but I would make this recipe first and then store in the refrigerator until serving.
 Now you can see the difference after it whips. 
 FOLD in the remaining ingredients ; 2 tablespoons of the mustard, season with garlic salt and black table pepper to taste. *Chives may be added for color.
 This is so good served as a condiment for your meat and veggies. You won't believe how GOOD this tastes! This cream has a a light buttery flavor. The mustard and seasonings blend in nicely, creating an unexpected, yet mild taste to the cream. Everyone, who has tried this recipe, has absolutely loved this condiment!

Grilled Ribeye Dinner for Four...



Grilled Ribeye Dinner...
When four friends get together for a weekend...great things happen!
It didn't take us long to decide the menu...we all worked together and dinner was ready in no time!
4 Ribeye's
Loaf of Sourdough bread
4 potatoes
2 onions
Cabernet Blue Cheese Butter

Baked Potatoes:
Scrub 4 potatoes, pierce skins with a knife, oil skins with olive oil and season with garlic salt.
Bake in microwave on a plate at full power for 5 minutes, then turn over and bake for another 5 minutes. Check with a knife for softness, cut in half lengthwise. Top with a dollop of cabernet blue cheese butter before serving.
Ribeye's:
Prepare the Ribeye's with a light coat of olive oil and season with worcestershire
 pepper and garlic pepper to taste
Grill on a hot grill, 4-6 minutes on each side for medium rare. Let rest 5-10 minutes before serving.
Just before serving, top with a tablespoon of Cabernet Blue Cheese Butter (see recipe below) 

Grilled Onions:
Clean and prepare onions, remove skins
Cut in half, brush with olive oil, cook on grill with steaks  
Sourdough Bread:
Prepare and broil sourdough bread while other food is cooking.
Slice lengthwise, butter with cabernet blue cheese butter. Slice into serving pieces. Broil until done, keep a close watch.

Cabernet Blue Cheese Butter:
2 cubes of soften butter
1/8 cup of chives
1/4 cup cabernet wine
garlic pepper to taste
1/2 cup of blue cheese crumbles
Blend all ingredients well, refrigerate for up to one month.
(*Set some aside to spread on bread before cooking. Put remaining butter in the fridge to chill until topping meat and potatoes.)
Serve with a simple side salad....the results were awesome!

Taco Time...

Tasty Taco's 
 It's the season for Taco's...yummy! 
 Taco Recipe
1 pound of lean hamburger
Add fajita spices, a small amount of olive oil
Season with garlic pepper
Cook the above and crumble. Set aside and reheat just before serving
Cut and seed 4 tomatoes, * If you seed them they will not be watery
Cut 4-6 green onions, sliced
Open one package of shredded mexican cheese, place in a bowl
2 medium cans of olives, open and drain
1 large can of chopped green chiles, drained (optional)
1/4 head lettuce, shredded
1 large can of refried beans, heat just before serving
Chili Hot Sauce & Sour cream
Avocado's, 3 large smashed with a splash of lemon or lime, season with garlic pepper, mix well
1 dozen yellow corn tortilla's
Fry the tortilla's in hot oil, reheat the the hamburger
Assemble the Taco's
Tasty Tacos served with Style...
