With the holidays around the corner, I am always looking for something quick to fix on a cool fall day. Today is rainy and I wanted something warm for lunch.
*(Sorry this posting was late today, the rain storm knocked out the internet for a short while.)
Garlic Chicken Alfredo Pizza
This recipe makes two personal pizza's
1 small package of fresh spinach
1/2 cup Garlic Alfredo Sauce, divide in half; 1/4 cup x 2
1 package of Tri-colored pepper, diced
minced garlic
parmesan blend seasoning
2 pieces of cooked chicken thighs, slice into strips
White cheddar cheese, grated, 1 cup divided in half; 1/2 cup x 2
1 package of Tandoori Naan (whole grain) bread, contains 2 pieces
*(flat bread, in the deli department of the grocery store)
Lightly coat the bread with cooking spray, both sides. Spread 1/4 cup garlic Alfredo sauce on the bread. Sprinkle on the bread, the Parmesan Herb spice and minced onion, to taste.
Next add the tri-peppers and chives as desired.
Add the sliced chicken and the grated cheese on top.
Bake in the oven at 400 degrees for 10-12 minutes.
Serve with or with out added spinach. If you choose to add the spinach, do so after cooking. Place the Spinach on top and return to the oven for only a moment.
