Beefy Irish Pub Sandwiches...

This sandwiches are always hit! Never once have these been anything, except deliscious & devoured! :)))
Served these at Christmas this year, but we also serve them year round!  

Beefy Irish Pub Sandwiches....
Irish Pub Sandwiches

Serves 6-8

Ingredients:

3 pounds of Chuck Roast, trim fat
1 tablespoon of Olive Oil
1/3 cup of Soy Sauce
1 cup of Coke (not diet)
2- 10.5 ounce cans of Beef Consommé
1/4 cup of minced Onion
1 Beef Bouillon cube, (I used Knorrs, soft cube)
1 teaspoon (or to taste) of Garlic Pepper (PineCreek Brand , see recipe here)
1/4 teaspoon of thyme
1 package of Knorr's Classic Brown Gravy, dry

*In addition you will need: 12-14 slices of Provolone or Jack Cheese & 6 -8 Sourdough rolls

Directions:

Combine all ingredients in a large crock. Cook on low for four hours.
Fork shred the beef off the bone, discard any chunks of fat & remove bones. Return to the crock pot & gravy mixture, cook for another 2 hours on low.

To Serve:

On sourdough sandwich rolls, split and fill with beef and two slices of Jack or Provolone cheese.
Heat in the microwave to melt cheese or use an oven set at 350 degrees, until cheese is melted.

In a small bowl add some of the gravy/cooking juices for dipping if desired. (Additional gravy may be added/made for dipping as well).

Spaghetti Sandwich...

We LOVE left over Spaghetti! Mama D. LOVES Cold Spaghetti Sandwiches....I love the Ultimate Grilled Spaghetti Sandwhich! Never had one? Check out the recipe below...
The Ultimate Spaghetti Sandwich

Ingredients & Directions per Sandwich:
  • Left over Spaghetti...Need a recipe? Check here, it's our Family's Fave!
  • 2 slices of Extra Sourdough sandwich bread
  • 2 strips of bacon, cooked
  • 2 tomatoe slices
  • 2-3 slices of Sharp White Cheddar Cheese
  • 1 tablespoon of softened Butter
  • Garlic Pepper/Salt to taste
  1. Butter one side of each bread slice, sprinkle with garlic salt or garlic pepper (great seansoning recipe here)
  2. Place one slice, buttered side down, on a griddle or fry pan
  3. Layer in order: 1 piece of Cheese, some Spaghetti, the Bacon, Tomatoe slices and another piece of Cheese
  4. Place the other slice of bread, butter side on outside, on top of the sandwich, press slightly down with a spatula
  5. Grill on both sides until golden brown and Serve 
The ultimate in a Spaghetti Sanwich! YUM....

The Dirty Pig Sandwich...

"This is a Grown-up's PB & J"
Yep...you read it right! The Dirty Pig sandwich is absolutely awesome! This is a favorite of Ornery's....We have served this to several of our house guests.  They are always amazed at the Sweet & Salty savory taste of this simple yet fabulous treat! Bacon, Bacon, Bacon.....YUM!
                                          This looks too simple....But wait till you taste it! 
 Simple ingredients and make a standard peanut butter and jelly sandwich become Gourmet! 
Adults love it when they try it!

 Per sandwich:
  • 2 slices of bread per sandwich
  • 1 grill pan
  • On one side of a piece of bread, spread a thin layer of peanut butter
  • On the other slice, spread a thin layer of strawberry butter 
  • (strawberry butter, recipe to follow)
  • Next on top of the Strawberry butter, spread a thin layer of strawberry jam
  • Add 2 to 3 pieces of crisp cooked bacon, to one side of the prepared bread
  • Put the two pieces together, like a sandwich
  • Spread a thin layer of plain butter on each side of the bread. Grill on both sides till toasted
Strawberry Butter Recipe:
This makes quite a bit of pastry butter. But it may be used on several types of food and will last a couple of months in the fridge or 6 months in the freezer.
  • 2 cups of powder sugar
  • 2 cubes of softened butter
  • 2 tablespoons of strawberry jam
  • 1 package of soften cream cheese
Blend well.

 Sprinkle with Powder and serve. The sandwich is "ooey-gooey" yummy. You may prefer to eat with a fork and knife.

Cheesy Bagel & Beef Burger Melt...

I'm getting a jump start on National Cheese Burger Month, which is the month of May.  We LOVE Burgers! Big, Beefy & Cheesy...Bring it on! With Mothers Day, Graduations, Summer Holidays, BBQ's....WELL...you know.....Burgers are a year round, Red, White & Blue American Meal!  Just about anything goes....On a Burger!
"Bagel Burger Melt" served with Garlic Fries
Not your traditional Burger....But Beefy & Cheesy! Great for a fast, hot meal...I used precooked Prime Rib Beef Roast!

Bagel & Beef Burger Melt


  • About a cup of thinly sliced of cooked Prime Rib per sandwich
  • Everything Seed Bagels: Split, prepared with garlic butter for toasting under the broiler, 1 bagel per burger
  • 1 onion, sliced for sautéing
  • Spinach Leaves, fresh
  • Garlic Pepper Jack Cheese, 2-3 slices per burger
  • Pine Creek's Seasoning (here) or garlic pepper seasoning
  • Butter for sautéing for the bagels & onions
  • Brown Gravy for dipping, optional
Instructions:
In a frying pan sauté the sliced onions in 1-2 tablespoons of butter,
just as the onions are starting to brown...toss in the sliced beef to slightly warm and blend together.
Season with Garlic Pepper/Pine Creek Seasoning to taste.

Broil the Garlic Buttered Bagels under the broiler until lightly browned

Heat the Brown Gravy, I used a Knorr's Brown Gravy Mix or use a jar of brown gravy, *Optional

Layer the toasted Bagels with Cheese, the Beef & sautéed onions & spinach leaves...be generous...you want it Ooey-Gooey ...Repeat 2-3 times.

Place the top on the burger...then place the burger in the microwave for 7-10 seconds to melt the cheese and blend everything together. or place in a hot oven at 350 degrees for about a minute to melt. And serve....We like ours with Brown Gravy for Dipping....Yummers!

Grilled Cheese Sandwich with a Bacon Burger...

The use of a leftover Hamburger patty...turned this grilled cheese sandwich into a masterpiece meal!
Grilled Cheese with a Bacon Burger
Recipe based one Sandwich

2 slices of whole wheat sourdough bread
4 large slices of cheddar cheese
1 cooked hamburger patty, sliced in half
2 pieces cooked bacon
**Grilled onions, optional
Butter for grilling
1/4 cup of parmesan cheese, grated & divided
garlic salt, season to taste

Instructions:
Use a griddle or fry pan for grilling...
On one of prepared slice of bread, lightly buttered & seasoned, layer all ingredients except the last 3 onto the bread
Place the other buttered/seasoned slice of bread on top.
Grill sandwich on both sides. Before the grilling is done lift the sandwich and place some grated parmesan cheese beneath the sandwich and finish grilling,  Then flip and repeat the same steps.

When done, this sandwich will have a lovely toasted cheese crust on the outside and a wonderful melted cheese inside, melded with the bacon & burger.  *Grilled onions or even sliced avocado added a wonderful flavor to the sandwich.

Grilled Bacon & Cheese Sandwich

A Grilled Bacon & Cheese Sandwich fit for your King or Queen...
 OMG...this was YUMMY!
 This sandwich came together quick and it was AMAZING!
Grilled Bacon & Cheese:
Bacon
Jack & Cheddar Cheeses
Avocado's, sliced
Onion, sliced and grilled
Sourdough bread
Butter, softened
Garlic Salt
 On sourdough bread, layer all items....
Cheese, grilled onions....
 Bacon, Bacon & more Bacon...
 Next sliced avocado and cheddar cheese...
 Butter the outside of the sandwich and sprinkle with garlic salt...then grill each side until toasted.
Perfection achieved! 
 Serve with homemade Mac & Cheese with Pankco crumbs on top...
 Yum, a perfect Lunch...
Up close and Yummo! Who doesn't love BACON???

A Spicy Pig in the Henhouse Sandwich...

YES....You read it right!
A Spicy Pig in the Henhouse Sandwich
 This sandwich was yummi-li-ous!
 What a COMBO.....YummO
A Spicy Pig in the Henhouse Sandwich
Butter for grilling
1 fully cooked chicken thigh, sliced thin, (1/2 thigh per sandwich)
Bacon cooked, 2 -3 slices per sandwich
Sweet red peppers, sliced
2 green onions, sliced
Green chilli's, diced & drained
White cheddar cheese , 3 slices per sandwich
Blue cheese, crumbles or 1 slice-crumbled per sandwich
 Cheddar/Jack cheese, grated...1/8 cup per sandwich 
Whole wheat sourdough bread, sliced...2 slices per sandwich
Garlic Salt & Pepper to taste
 I placed ingredients on plates for easy assembly. Then heated a fry pan to medium.
Butter one side of the sourdough bread slices. Then build your sandwich and grill till done.
 Divide & layer the cheese on each side of bread, next add the sliced chicken
 Add the red pepper, green chilli's and onions
 Layer on the bacon and the remainder of the cheese.
Season with Garlic Salt & Pepper
 Grill both sides of the Sandwich as you would a grilled cheese sandwich.
Mmmmm...it is smelling good by NOW!
 An absolutely awesome blend of meat and cheese's!

The Stilton Burger w/ Gourmet Taste...

The Gourmet Taste of a Stilton Burger
 This Burger was Amazing!
Ingredients needed:
1 package of Hamburger, 1-1 1/2 pounds
 (* I only made 2 burgers so I used less meat)
2-3 slices of cooked bacon per hamburger
Meat loaf seasoning
Worcestershire Pepper to taste
1 to 2 tablespoons of softened butter to the meat.
Garlic Salt to taste
Green onions, sliced
Garlic Ciabatta Bread or Focaccia Bread
and...
Stilton Blue Cheese, sliced!!!
**Stilton Blue Cheese is an English Style Blue Cheese...
more on this cheese at the end of my post.
 Mix together the meat, 1-2 tablespoons of softened butter, meatloaf seasonings, Worcestershire pepper and garlic pepper. Form meat into patties to fit your bread and cook as desired. Sprinkle lightly with garlic salt while meat is cooking.
After the first side cooks...
FLIP the burger and add slices of the Stilton Blue cheese. This allows the cheese to melt for assembling.
We grilled our bread on the stove top. The bread was lightly buttered...doesn't the large hunks of garlic look yummy in that bread! Mmm Mmm Mmmmmmmm... 
Oh MY!!! Can you smell it? It's wonderful...
Ready to CHOW down!

These burgers were delicious shared with a great bottle of Cabernet Wine...

A note about...
Stilton Blue Cheese
Stilton is a farm-made (English -style) cheese made from whole cow's milk and is at its best from autumn to spring. It is allowed to ripen for  4 to 6 months, during which time it is skewered numerous times to encourage the growth of penicillium Roquefort mold (also present in Roquefort cheese). Stilton cheese is best eaten with port or a full bodied dry red wine.

That's a Hot Pastrami Sandwich...

Now that's a Hot Pastrami Sandwich...
This is one of my Dad's favorite sandwich's. Since it's his birthday this week, i wanted to post this for him. 
Very simple and quick to make, but FULL of taste.
You will need:
1/2 to 1 pound of pastrami
 (depending on how many sandwiches you are making).
Soften butter
dill pickle slices
monterey jack cheese
garlic salt
Dutch Crunch Bread rolls
Lightly spread butter on the bread rolls. Then sprinkle with garlic salt.
Toast lightly in the oven under the broiler. Watch carefully as not to burn.
After removing the rolls from the broiler, add thin slices of jack cheese. 
Use desired amount.
Start layering meat and cheese to desired amount.
Place the top of the roll on top of the meat and cheese. Heat sandwich in the microwave for about 1 minute. Then ready to serve.
We added dill pickles after it was cooked. Ohhh Yummy! These were good!
Nothing like a hot sandwich on a cold day.

Hearty Philly Cheese Steak Sandwich...

 Hearty Philly Cheese Steak Sandwich
 Hearty Philly Cheese Steak Sandwich
Ingredients:
Ciabatta Bread Rolls, Three Cheese Style, 4 rolls
Roast Beef, Thinly Sliced, 3/4 to 1 pound purchased from the Deli
1 medium yellow onion, sliced thin into strips
Jack Cheese, thin strips...I LOVE cheese...amount as desired
1 orange bell pepper, sliced thin...the orange bell adds wonderful sweet flavor
1-2 packages of classic brown gravy, I used Knorr's brand. Their beef gravy has a full beefy flavor and it thickens nicely. Definitely MY favorite choice!
Water to make the gravy, follow directions on the package.
Butter, softened
Garlic salt and garlic pepper seasonings
Slice the veggies and prepare a frying pan for sauteing.
While veggies are sauteing over medium heat. Slice the cheese.
Have the roast beef ready for assembling the sandwich. Meat can be cold, no need to heat meat before assembly.
Season to your taste the onions and bell pepper. I of course, used my signature spice...Garlic Pepper to season the veggies.  BIG Surprise...huh?
Prepare the Ciabatta Bread with softened butter and garlic salt.
Start layering cheese and meat alternately on the bread. *Add the amount YOU desire. Top with the sauteed Veggie mixture and one last layer of cheese.
Use a toothpick or small skewer to hold the sandwich together.
Pile it High... :0 yum!
Meaty Beef Gravy
Have the gravy ready....Prepare gravy while the veggies are cooking.
Heat the assembled sandwich in the microwave for 1 1/2 minutes on high.
Serve with beef gravy for dipping! NOW, I'm hungry!
Serve with your choice of side dishes to complete.
Or just make TWO sandwiches...lol
