Crab Cakes...Best Ever!

it was Sunday and I have been in a clean & purge mood. So when dinner time came...I went to the pantry...I had forgotten to thaw anything doe dinner! I spied Crab in the can...don't whence...yes there are some great canned crab brands out there.  I often keep this & salmon on hand for quick dinners. Living in land & in the foothills, fresh crab is not always available ! (I wish I had had fresh crab!) So next best thing! These crab cakes were maked in a muffin tin and were so tasty. We served them with cocktail sauce & dijon mustard. My fave is to use both! YUM...kicked it over the top!



Crab Cakes...Best Ever!

Ingredients :

3 cans of premium canned crab meat, packed in water, rinsed, drained and placed in a paper towel to remove excess water. (or 1 pound of fresh Crab)
1 cup of ritz crackers, ground fine
1 smal jar of oil packed pimentos, do not drain
1 egg
1 heaping teaspoon dijon mustard
2 tablespoons of lemon juice
1 tablespoon of fresh parsley, chopped fine or dehydrated
1 heaping teaspoon of Old Bay Seasoning
1 tablespoon of Worcestershire Sauce

After baked: Garnish with 1 heaping tablespoon of butter, seasoned lightly with garlic salt

Directions:

Place crab meat in a medium bowl, check for any fragments of shell, fork shred into small pieces
Add crushed ritz crackers , I used a food processor to do this.
In a separate bowl, mix together: The egg, pimentos w/oil, mustard, seasoning. lemon juice. and worcestshire sauce, blend well
Mix the sauce mixture with the crab meat and crackers.
In a prepared muffin tin, add the meat mixture to fill.... makes 10-12 crab cakes depending how fill you fill the muffin tin.

Bake in a preheated oven at 350 degrees for 30 minutes. Remove from the oven and drizzle 1 heaping table spoon of melted garlic butter over the top equally!  Serve immediately!

Serve with Cocktail sauce &/or Dijon Mustard, serve alone, as a meal or on a bed of lettuce.

Homestyle Mac 'n Cheese...Diet friendly!

Who doesn't love comfort food! Especially when you start that dang diet again! Haha... It's that time again, the "I ate too much through the Holidays, got to go on a diet NOW" time! :))))
Anyway, my daughter and have teamed up to work together support wise...as we go on our choosen diets and exercise routines! Here is my first post for the "Lean 'n Mean Cuisine " recipes....



Homestyle Mac 'n Cheese

Ingredients:

1 box of DreamFields corkscrew pasta
Enough water to cover about an inch over the pasta in a deep pot or cast iron pan.
1 chicken broth soft cube, Knorr's brand. *(Or add one can of chicken broth with some water to cover as mentioned above)
1 jar of cheddar cheese dip, (Find in the Chips & Snacks aisle)
1 bag of shredded cheddar cheese, about 2 cups
Season with pepper or a non salt seasoning, (the broth has plenty of sodium or use a low sodium)
1 small jar of pimentos with the oil
3 strips of bacon cooked crisp and crumbed for topping.
Chives for garnish

Directions:

In a large stock pot, add the past, water, broth cube and jar of pimentos /oil. Boil until the pasta is cooked. No need for draining liquids.
Fold in the jarred cheddar cheese dip & stir well.
Next, add the shreaded cheese and blend.

Ready to serve...
Add some crumbled Bacon on top and garnish with Chives.

Beefy Irish Pub Sandwiches...

This sandwiches are always hit! Never once have these been anything, except deliscious & devoured! :)))
Served these at Christmas this year, but we also serve them year round!  

Beefy Irish Pub Sandwiches....
Irish Pub Sandwiches

Serves 6-8

Ingredients:

3 pounds of Chuck Roast, trim fat
1 tablespoon of Olive Oil
1/3 cup of Soy Sauce
1 cup of Coke (not diet)
2- 10.5 ounce cans of Beef Consommé
1/4 cup of minced Onion
1 Beef Bouillon cube, (I used Knorrs, soft cube)
1 teaspoon (or to taste) of Garlic Pepper (PineCreek Brand , see recipe here)
1/4 teaspoon of thyme
1 package of Knorr's Classic Brown Gravy, dry

*In addition you will need: 12-14 slices of Provolone or Jack Cheese & 6 -8 Sourdough rolls

Directions:

Combine all ingredients in a large crock. Cook on low for four hours.
Fork shred the beef off the bone, discard any chunks of fat & remove bones. Return to the crock pot & gravy mixture, cook for another 2 hours on low.

To Serve:

On sourdough sandwich rolls, split and fill with beef and two slices of Jack or Provolone cheese.
Heat in the microwave to melt cheese or use an oven set at 350 degrees, until cheese is melted.

In a small bowl add some of the gravy/cooking juices for dipping if desired. (Additional gravy may be added/made for dipping as well).

A Foodie Faux Pas Dinner Party...

YES...a total foodie disaster dinner party....Let me back up a bit...

While in Oahu, at the timeshare, I offered to cook dinner for some friends who live there....Just a simple dinner, mostly to relax and visit.

I grew up eating and making Loco Moco. My Dad, who was stationed on Honolulu, fell in love with Hawaii and the food.  He made Loco Moco enough that it was a regular meal at our house. I would tease my Dad that this was Hawaiian okie food....Much like our Hamburger Gravy over Mashed Potatoes or SOS... (Sh%t on a Shingle). He always agreed. I love it so much that I made this fairly often myself through my adult life. So... back to the night of the foodie faux pas dinner....

I had made a version of Loco Moco on my last visit to Oahu...One of our friends LOVED it! I offered to make it AGAIN this trip.  Ornery and I went grocery shopping and started cooking. I never gave any thought to the meal not turning out! Everything was going great...our guests were arriving soon.

WHEN... the smoke detector went off! The timer I had set on the stove was so faint, I never heard it go off!!! My first batch of Pineapple pastries were RUINED!!! (Second batch was good, will post later.)

I cleared the kitchen/living room of smoke. Got the fire alarm off, dumped the overcooked pastries, started the brown gravy & hollandaise sauce  (yes...I was fixing my gourmet recipe).  Ornery took the trash out!

WONDERFUL, I thought...but no time to waste...I had gravy on the stove, (the rice and meat were already cooked and waiting ). I slipped the SECOND batch of pastries in the oven. The gravy and sauce turned out perfect and I turn OFF the burners, to let them set. OFF, (is the key word)....OR SO I THOUGHT!


One of our guests arrived, cocktail served, I sat for a... MOMENT! THEN...I went to stir the gravy and sauce...AND, as I get up from the chair...I see the sauce FOAMING! What the HECK! The burners to the stove were turned off!  OFF!!!  NOPE! The knobs were OFF but the heat had still been on! OMG!!!! I had BURNT gravy and SCOLDED sauce! NOTHING I could do! In the sink the pans WENT!


I called my Hawaiian sister..."Help! My gravy is burnt!!!!"    "No worries Sis, she calmly said...I will get some at the restaurant downstairs."  YIKES!  I decide to cook a traditional Hawaiian dish for my Hawaiian friends who are family and THIS HAPPENS!
I OFFERED TO TAKE EVERYONE TO DINNER DOWNSTAIRS!  We didn't!  We salvaged the dinner and life went on! We had a great visit, and on this night, through my embarrassment, I truly experience the real value of friends who are family! AND, that is PRICELESS!
                                                  But, I never want to do the multi foodie faux pas again!

Lessons learned: Never offer to cook for friends when NOT in your own kitchen! And, Life is PERFECT when you choose friends who become FAMILY!

Cowboy Loco Moco...

Cowboy Loco Moco....Reposting this awesome meal....I've had almost a thousand hits on the yummy homestyle recipe.....Pin it today!
I love the Hawaiian dish...Loco Moco. If you've never had it, it consists of white rice, a hamburger patty, a fried egg and brown gravy on top of everything.

 Most of the Loco Moco you get in Hawaii looks like this dish. But there are SO MANY versions...EVEN in Hawaii. It is served pretty much everywhere, from Coffee Shops to Fine Dining Restaurant's. Yumm-o anyway you serve it!

We have some very good friends who are Hawaiian. They laughed when I called their local dish; "Good ole' Hawaiian Okie food"!
 I've been eating a version of this my whole life. Most of the time is was mashed potatoes, beef, an egg and gravy; white or brown. 
We've always called this Okie food....good ole' leftovers, the poor man's stick to your ribs food. Growing up and in college we made use of every last bite of food, in any way we could.
This comfort food is served for breakfast, lunch &/or dinner. 
It is good anytime of day. So enjoy my version of Loco Moco.

Cowboy Style Loco Moco

 We warmed up the left overs from the April Fool's Meat loaf cake 
(see the recipe in the March posts under April Fool's Birthday Cake).  
Main ingredients for this rerun (left over's) meal are:
Mashed potatoes
Hamburger patty or a slice of Meatloaf
1 fried egg per serving
Gravy; brown or white
Salt & Pepper to taste
Layer in a bowl in this order:
 Mash potatoes, heated through 
Hamburger patty (or meat loaf as in my version), fried or reheated
Fried egg, prepared over easy
Drizzle with Gravy, nice and warm
Fried onions and chives to garnish
Season with Salt & Pepper
So good with the soft yolk running through it ALL!

Teriyaki Chicken Rice Bowl...

Our son is a great cook....Yes, his Mama taught him to cook, sew (Yes SEW, by hand & machine), iron and laundry!  It has served him well...in the Navy (keeping his uniforn up to date & ironed),  and at home! The kids love his cooking! Most of his recipes are simplistic, yet never lacking in taste! After you check out this recipe...go check out his Ham recipe here....I have had countless hits (over 3K hits & counting) & praises over his ham...it's become a holiday tradition !!!!

Ham & Zucchini Quiche...

I love a good Quiche! This recipe is simple & the results are always perfect! I did a rustic finish to the edges of the Quiche crust....It didn't need to look perfect, because it tastes perfect! Just a little secret...I do a rustic crust when my rheumatoid arthritis is literally a pain!

Ham & Cheese Quiche
  The Cattle Queen Cooks

Yields: One Quiche

Ingredients:


  • 1 cup of heavy whipping cream
  • 4 eggs, slightly beaten
  • Garlic Pepper to taste
  • 4 slices of bacon, cooked and crumbled
  • 1/2 pound of pork sausage, cooked, crumbled and drained
  • 1/2 medium zucchini, grated and wrapped in a paper towel to absorb the moisture
  • 1 small onion, chopped & saute'd
  • 1 tablespoon of butter, for saute' onions
  • 1 cup of shredded cheddar cheese
  • 1/8 cup of Parmesan grated cheese
  • 1 pie shell
Directions:


  1. Set the oven to 350 degrees
  2. In a pie pan, place one pie shell, finish crust edges as desired, rustic, shaped, fork, etc.
  3. Prick the crust with a fork to vent and set aside.
  4. In a medium bowl, mix together; beaten eggs, garlic pepper, whipping cream, cheddar cheese, cooked sausage and cooked bacon, saute'd onions and prepared zucchini. Mix well.
  5. Pour the egg mixture into the prepared pie crust. 
  6. Sprinkle the parmesan cheese on the top of the egg mixture.
  7. Bake in the oven for 40-50 minutes or until a knife inserted into the cooked center, comes out clean. Let stand for 5 minutes; cut into wedges to serve.
Notes:

Quiche is perfect for Breakfast, Lunch or Dinner...Serve with fruit, a green salad, veggies, etc.
