Truly a fun project and gift....So easy to make quickly ...for or with the kids....!!! I made enough to share with all the grandkids from College to grade school!

Lemon Vodka Cake...Wedding Style...

This weekend, a family wedding was held....Our baby sister married her high school sweet heart, from 30 years ago.....She requested my Lemon Vodka Cake for her Wedding Cake.... I have never seen a wedding cake devoured quite so quickly...everyone was happy with the tasty results...Take a look at the photos & recipe below...Please read the recipe completely before starting....The original is based on 1 cake mix, the Wedding cake is based on 4 cake mixes.

The original Lemon Vodka Cake
Lemon Vodka Cake Recipe, Wedding Style
My Grandma (Marge) always made me a Lemon Meringue Pie (See recipe here) for my Birthday! Later, (after Grandma wasn't able to bake due to Alzheimer's), my hubby's Mom continued the tradition by making my birthday pie.

 I was never a huge fan of cake...until several years ago. This year I wanted a special cake with lots of lemony-pucker power!
I wanted a cake that would represent my love of Lemon Meringue Pie.
And BOY did I get it with this cake! OMG...It was an Awesome CAKE!
Everyone loved it and there was NOT a CRUMB left!
 "Lemon Vodka Cake"
**See the Wedding Cake Style Notes below
 A Semi-Homemade Cake packed with flavor & moistness.
Based on a 2 layer cake.
Recipe:
1 box of Lemon cake mix (use your box recipe as your guide)
3 eggs (as called for on the box)
1 cup of Lemon infused Vodka (the box called for water)
1/8 cup of lemon vodka reserved for infusion after baking the cake...
1/3 cup of lemon infused olive oil ( box called for baking oil)
1 lemon for juice (1 tablespoon) & zest (1/4 teaspoon)
1 small box of lemon shortbread cookies for topping 
1 can of Lemon frosting
Cake bakes aprox. for 30 minutes at 350. Use the baking directions on the box as your guide.

 Mix all cake ingredients together adding the lemon juice & zest to the batter.
Place in your baking pan, prepare pan with baking spray and dust with sugar. *Omit the sugar dusting if making the Wedding cake
Bake at 350 degrees for 30 minutes.
*Reserve the small portion of the lemon vodka for infusion after baking.

 Let the cake rest for 20 minutes before turning out of the pan.
Prepare a little more lemon zest to use for the frosting, set aside.

Notes for the  "Lemon Vodka Cake, Wedding Style"
~The above recipe is based on only 1 boxed cake mix, you will need to adjust to 4 cake mixes for a Wedding Cake serving about 60-70 people. This cake is very rich, so small servings are best.
~I make the cake 3 days prior to the wedding and froze the layers. On the morning of the Wedding, I removed from the freezer and frosted the cake.
~I used 4 cake mix's for the 3 tier cake, with 2 layers on each tier. 
~Add...1 jar of Lemon curd: Glaze the top of each layer with a thin layer of Lemon Curd
~For the Lemon Frosting/Icing: 4-5 cans of prepared Lemon frosting: In a bowl , add all of the cans. Stir in 2 tablespoons of Citrus Vodka and 1/2 cup of powder sugar. Blend Well. 
~You may add the crushed Lemon cookies between each layer. But do not use on the finished top, unless desired.
~Add a frosting layer to each layer of cake, on top of the lemon curd.
~Stack the layers to form the three tiers. 
~As you apply the layers, infuse the reserved vodka (1/4 cup, total) in each layer. * You may use an infusion needle or the poking method shown below.
~Next start applying the frosting to the outside of the cake. Apply in a thin layer to create the Naked Icing look, see the photo of the Wedding Cake for example.
~Choose your flower placements and add as desired to finish.
~Faux or real flowers may be used.
 Gently poke small holes on the top of the cake, then...
 Pour the small amount of lemon vodka on top of the baked cake. 
It will soak in.....

April Fools Sushi....for Kids & Adults



I couldn't wait to share these April Fools Treats for several reasons! (They are sooo cute & tasty too!)
"April Fool's Sushi"...We have had over 1k hits on this cute April Fools gag!
I know its Easter tomorrow BUT...it's April Fools MONDAY....
Yikes...trying to get everything done is...Well CRAZY...but FUN!
Can't disappoint the Grand kids!
*Secretly... I am already worried about next years April Fools food gag! It has to be GOOD, 'cause this one is SO cute! :S
 Too Cute....Too Fun
Everything is candy & desserts. The prep time is the biggest issue...you have to unwrap everything! Assembly is quick!
The fruit roll-ups are perfect to wrap the slices of little cakes/sushi. The candy sprinkles substitute for caviar eggs. The Octopus was NEW to the market for sweet and sour gummys, so scored on that one! Whoo-hoo!!!
The sea weed wrap on the rice cake is licorice, fruit wrap & rice krispies!
AWESOME!... 
 Here are a few items I picked up at the store...I grabbed anything I could find to make the sushi! Since Hostess is out of business, I had to locate Little Debbie Products...That was work! Finally found them at Walmart....A lot of the grocery stores don't carry them anymore. So much quicker than making them from scratch.
 I used a wet washcloth to help keep my knives clean as I worked....
I used canned frosting to glue the candy in place. Just takes a tiny bit...so freeze or plan to use the frosting on something else. You will have a lot left over! The containers were cute for packaging.
Sorry for the shadows...couldn't get away from all the beautiful sunshine flowing through the window!

If your Kids like chinese food....it would be fun to order dinner and slip these in with the other food... HeeHee

Bliss...Dessert that stands up to the name...

Bliss...I was asked recently to help with Wedding Reception...This dessert came to mind immediately. It is already very HOT in Cali....So, I knew this cool dessert would hit the spot!

Recipe adapted from our *Ghost Ranch Pudd'n Pie (see Here)

Ingredients:

  • 1 package of Golden Oreo Cookies, Crushed coarsely in a zip lock style bag with a rolling pin
  • 1 package, 8 ounce size of Cream Cheese, softened
  • 1/3 cup butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon of powdered vanilla
  • 1 large tub of Cool Whip, 16 ounces, softened, divided in half
  • 2 small package or 1 large package of Instant White Chocolate or Vanilla pudding
  • Approximately 3 cups of cold milk or the amount listed on the pudding boxes
  • A white chocolate bar for garnishing the top of the dessert, grated or chopped
Directions:


  1. Crush the oreo cookies, place in the bottom of a 9x13 pan, *I love to use foil pans for easy clean up
  2. Next, cream together the creamed cheese, powdered sugar, vanilla, and half of the cool whip. Blend together well. Layer on top of the crumbled cookies
  3. Mix the pudding as directed with the milk, it will thicken quickly. If you want it thicker, cool for 5-10 minutes in the refrigerator
  4. Layer the pudding on top of the cream cheese mixture
  5. Use the remaining Cool whip to frost the top of the dessert
  6. Garnish the top of the dessert with grated or crumbled white chocolate bar pieces
  7. Refridgerate the dessert for at least an hour, before serving. Serve with a spoon onto the dish or bowl.
  8. Notes: *Sugar free pudding may be used!

Pool Party with Photo Op's

We recently celebrated another Granddaughter graduating from 8th grade (3 granddaughters this year!)... Mom (Tara @ Trendy Treehouse) asked to hold the Party at Nan & Pop's Pool...The girls had a blast! Mom prepared the dinner & I made dessert. We set up Photo areas around the pool. Everyone had a great time. Check out our pool party....
ChaCha....ya did good! We know you will LOVE high school...

A few items were a must around the pool on a hot day...suncreen, bug spray....if it's really hot, put the lotions & potions on ice for cool and soothing effect.
As you know...even though you say "bring your own towels", there's always a few who forget! So I placed a few towels amounst the lounge chairs...just incase...funny thing...they were all used!
Buckets of cold water were always on hand....Gotta keep the kids & Chaperones hydrated!
I also placed a metal Coat Stand near the Pool for wet towels....Worked Perfect!

They party was a success, the food was devoured, the dessert was inhaled....barely anything left over! HaHa...KIDS, they'll usually eat you out of house & home! The memories were priceless!
