Fig Jam Ham...

Fig Jam Ham... Thanksgiving day I decided to use fig jam on my ham. And, I'm glad I did...This ham was so moist and the flavor was amazing...We cooked it in our large crock pot ....yummy! Everyone raved about the taste! It's a two thumbs up recipe!

 Fig Jam Ham

Ingredients:
 1 fully smoked/cooked Ham, bone-in
1/2 jar of Fig Jam
1/4 cup of Brown sugar
Garlic Pepper, (PineCreek Ranch Seasoning here), to taste
1/4 cup of dark rum, optional

Directions:

In a large, prepared crock pot place the ham after, you score the top.
1/4 cup of dark rum, optional, pour on top of the scored ham.
Spread the jam, generously on the top .
Sprinkle the brown sugar on the top of the jam.
Then sprinkle the garlic pepper on top of the brown sugar.
Cook according to directions or do as I did and slow roast on medium for about 3 hours.

Notes:

~My lid did not fit on the crockpot due to the height of the ham...I covered the top of the ham and crock pot with heavy foil and left it covered while cooking. This worked out extremely well...This ham was amazingly moist!

Sweet and Smoky Pulled Ham...

Pasta Carbonara...

This recipe was amazing....Ornery says this is his new favorite recipe! It was that good!

Pasta Carbonara..
   The CattleQueen Cooks

Ingredients:

  • 2-3 tablespoons of Butter
  • 2-3 tablespoons of Olive Oil
  • 1 small Yellow Onion, diced small
  • 3-4 roasted Garlic Cloves, minced
  • 1/2 cup of Heavy Cream
  • 1/4 cup of Italian parsley, wash and chopped
  • 1/3 cup of grated Parmesan Cheese
  • 2/3 cup of shredded White Cheddar Cheese
  • 1 soft cube of Chicken broth (Knorr's brand)
  • 4-5 egg yolks, blend together
  • Salt & Pepper
  • 4-5 pieces of bacon or pancetta
  • 1 package of Spiral Pasta ( I use low carb for my dietary needs), or Angel Hair pasta may be used.
Directions:


  1. Boil a pot of salted water. Add the pasta, the water should be about one inch above the pasta. Also add the chicken broth cube and a splash of olive oil.Cook until Pasta is done, drain if needed.
  2. In a saute pan, melt the butter and oil over medium heat, then add the diced onion and garlic. Saute lightly. Add the pancetta or the bacon, mix well. Cook and stir once in a while until the bacon is cooked. (I usually start the pasta when the bacon has been added). If you like the Bacon crispy, cook a little longer.
  3. When done, stir together the Bacon mixture into the pasta. Mix well.
  4. Stir in the the heavy Cream, Cheeses, parsley and the Egg yolks. Mix well.
  5. Place the Pasta Carbonara in a prepared casserole dish, bake for about 15 minutes at 350 degrees to finish and serve.

Chicken & Sausage Kabob's...

Chicken & Sausage Kabob's.... Made these for dinner tonight...Very Yummy!!!
 Chicken & Sausage Kabob's

Ingredients:

  • 1 package of boneless, skinless, Chicken Thighs.  Slice in large chunks.
  • 1 package of large grilling sausages, I used Beer Bratwurst sausages
  • 2 bell peppers, 1 orange, 1 red, slice into chunks
  • 1 large yellow onion, quarter into chunks
  • 1 package of large mushrooms
  • Habanero Olive Oil
  • Soy Sauce
  • PineCreek Ranch Seasoning or Garlic Pepper
  • Skewers, soaked in water...
Directions:

  1. In a large, prepared fry pan, place the chicken and drizzle with the olive oil and soy sauce. Cook over medium heat until done.
  2. Ina another , smaller fry pan, steam the sausages according to the package, cool then slice into thirds or fourths. Add to the chicken fry pan and cook together on low until browned & done. Cool slightly, to thread on the skewers.
  3. Slice * prepare the peppers, onions & mushrooms for assembly.
  4. Sprinkle with Garlic Pepper to desired taste across the Kabob's.
  5. Layer the ingredients on the skewers as desired, place on a prepared baking sheet.
  6. Drizzle, lightly with a little olive oil and a little soy sauce.
Service with Rice and or more veggies such as grilled corn.
  1. Bake at 350 degrees or place in a smoker for bout a half hour, until veggies are softened.

Fried Rice...Embellished from a box
1 package of fried rice
1 chicken broth soft cube (Knoor's)
2 cups of water, 2 tablespoons of butter
garlic salt to taste, & the seasoning package
1 egg, uncooked & scrambled
Chives, amount  as desired
Follow directions on the box adding the broth cube & garlic salt 
When the rice comes to a boil, stir in the raw scrambled egg. It will cook in the rice.
Stir in the Chives
Finish cooking the rice as directed.
And serve.

Fancy Ham & Cheese Roll-Up's...

So I fixed these little gems for dinner tonight....Sweet Caroline (Mom) was here for dinner...She loved them so much, she had a few! :))) (Pssst....Don't tell her I said a few!!!) She raved about them on almost every bite!

These would be great served as appetizer's, lunch or dinner...the butter sauce they are cooked with is just flat out delish! Ornery will be disappointed he was on the road! I'll have to remake them this weekend for Father's Day!

 Fancy Ham & Cheese Roll-Up's
      The CattleQueen Cooks

Ingredients:

  • One can of Pillsbury French Bread
  • 1/2 pound of thinly sliced Honey Ham
  • Several thin slices off a brick of Jack Cheese
  • 1 large Onion, chopped & sautéed
  • 1 tablespoon Butter to sauté the Onions 
  • Seasoning to taste, Garlic Pepper (see my blend here), sprinkled on the cooking onions
  • 4-6 tablespoons of Butter, melted for the sauce
  • 1/2 tablespoon of Worcestershire Sauce
  • 1 tablespoon, loose of Brown Sugar, (*I used Splenda, sugar free brand) 
  • 1/2 tablespoon of Dejon Mustard
  • 1/2 tablespoon of Poppy Seeds
Directions:


  1. Roll out the bread dough on a prepared area, into a rectangular shape
  2. Layer the Ham across the bread dough
  3. Next, layer the cheese on top
  4. Sprinkle the sautéed onions across the cheese
  5. From the long side, roll the bread into a long rol, see photos
  6. Slice the roll into equal parts
  7. Layer the sliced rolls into a prepared baking pan, place loosely into the pan
  8. Prepare the Butter Sauce: Stir together the melted butter, worchestershire sauce, brown sugar, dejon mustard & the poppy seeds.
  9. Pour the butter sauce evenly over the ham rolls
  10. Bake in a 350 degree preheated oven for 25-30 minutes until done, cover with foil if need be, to prevent browning the rolls too much
Notes:

  • This recipe may be doubled easily
  • Make the meat roll and chill for up to two hours before cutting and baking.
  • Serve with a side of Soup or Salad

Crock Pot Pulled Pork..Done Right...

This recipe turned out so well! Ornery, after one bite, proclaimed ....Pulled Pork Done Right! The flavors were amazing....So glad I made a large batch!

I am reposting this recipe due to a few requests....This recipe has had well over a THOUSAND hits! It is great for camping, cabins, ranch gatherings, family reunions, summer lazy or busy days! It cooks all day, and is so very tender...One pot makes several different recipes!
The easiest dinner ever! A great meal when your family is tight on time!

Crock pot Pulled Pork Done Right!
from Pine Creek Style


  • 1large pork tenderloin
  • 1 large jar of Enchilada sauce
  • 1 medium onion, chopped
  • 1/4 bunch of cilantro , chopped, for cooking
  • 1/4 bunch of chopped cilantro for topping.
  • 1 heaping tablespoon of prepared (jarred) garlic
  • 1 large can of mild green chills or jalapenos , chopped and drained
  • Seasonings: Cumin & Pine Creeks Styles (See recipe here) seasoning or garlic pepper to taste.
  • 2 tablespoons of flour mixed with some enchilada sauce, to help thicken, add to the crock pot.
Directions:
Place everything into the crock pot (see the placement order below) and cook on low for 6-7 hours.
1. Meat
2. Spices & veggies
3. Pour the enchilada sauce over the top and blend gently, including the flour mixture to help thicken.

Shred the cooked pork with two forks and mix well.
Serve in Taco Shells with Cilantro, Cheese & Sour Cream

*We also made Tostadas & Hot Shredded Pork Sandwiches...YUM!
 Mmmm...ready to eat! Smells delicious!

Pineapple Sausages or Pineapple 'n Pork Kabob's

This recipe may be fixed two ways....I came up with this appetizer recipe when I found Pineapple & Bacon Sausage at our local meat market...It was an instant hit! Devoured immediately ......

The hint of coffee and the brown sugar takes this recipe over the top!
On a side note: I love to add a small, yellow onion to the saute' , it takes this recipe beyond
yum-i-lic-cious!  Mmmm-mmm-good!

Bacon Brown Sugar Sausages

 This is the most popular requested appetizer I make.  We have had over 1,000 hits on this
 recipe. Voted "The Best" by friends and family.
Bacon Brown Sugar Saugages...


 Bacon Brown Sugar Sausages

Ingredients:
  1. 1 package of "little beef smokies" sausages
  2. 1 pound of bacon, strips cut into thirds
  3. 1 cup of brown sugar (I used Splenda Brown Sugar, works great!)
  4. Garlic pepper to taste
  5. 1 tablespoon of dehydrated onions
  6. 2-3 tablespoons of brewed coffee
  7. 1 tablespoon of crown royal whiskey
Directions:
  •  Mix the coffee, whiskey, the onions and 1 heaping tablespoon of brown sugar, blend well
  • Wrap each sausage in a (1/3) piece of bacon strip
  • Place the bacon/sausage in a prepared 11x13 baking dish
  • Drizzle the bacon wrapped sausage with the coffee mixture, cover completely
  •  Preheat the oven to 350 degrees.
  • Next mix the garlic pepper into the brown sugar
  • Then place the brown sugar mixture over the top of the bacon wrapped sausages
  •  Use it all, heap it on...
  • Place the meat in the hot oven and bake until bacon is cooked
This appetizer is Fantastic! It also travels well. If I take this dish to friends or families houses, I place the finished product in a crock pot and set it on the buffet setting. You won't be disappointed!

Smothered Pork Chops...

We were craving pork chops....this is what we through together...
Smothered Pork Chops

Ingredients:

  • 2-4 Pork chops, boneless
  • Salt & Garlic Pepper to taste
  • 4 tablespoons of Olive Oil
  • 1 large yellow onion, sliced thin into rings
  • 1 package of fresh sliced mushrooms
  • 1 package of Pork gravy mix, (I used Knorr's)
  • 3/4 cup of whipping cream
  • 3/4 cup of cold water
  • 1 tablespoon of butter
Directions:

  1. Preheat the oven to 400 degrees
  2. Coat the pork with the oil and season well with the salt and garlic pepper
  3. Brown the meat on a griddle or frying pan, medium high, for about 2-3 minutes on each side. Searing the meat
  4. Place the seared meat in a baking dish and bake for about 10 minutes.
  5. While the meat is baking, sauté the onions and mushrooms, season lightly if desired
  6. In a sauce pan, add the gravy packet, water and whipping cream, stir gently, continuously, bring to a boil and reduce.
  7. Stir in the tablespoon of butter into the gravy
  8. Next, add the cooked onions & mushrooms to the gravy, gravy will be thick.
  9. Remove the baked pork from the oven and spoon the gravy sauce over the top and serve immediately.
Serve with your favorite veggies and mashed potatoes.

Whiskey Soaked Pork Tacos...

Whiskey Soaked Pork Tacos....Mmmmm, this were amazing! I love concocting new recipes and this was a winner!

Whiskey Soaked Pork Tacos

Ingredients:

  • 1 small Pork Tenderloin (serves 4), mine was seasoned with Pepper & Garlic
  • 1 package of Pork gravy, dry, *I used Knorr's
  • 2 tablespoons of tomato paste
  • 2 tablespoons of cilantro paste
  • 1 tablespoon of chunky garlic paste
  • 1/2 cup of whiskey (your brand choice, I used Wild Turkey)
  • 1/4 to 1/2 cup of water, depending on your size of tenderloin
  • 2 tablespoons of Olive Oil
  • Cumin, smoked paprika, salt & pepper to taste
Directions:

  1. Place the pork in a small prepared crock pot, turn on high
  2. Place all other ingredients in the crock pot
  3. Cook for 1/2 hour on high, reduce to low and let cook several hours
  4. Pork will be for tender, shred the Pork with forks and toss in the juices, mix well
  5. The pork may cook on warm for a while before serving, sauteeing in its whiskey gravy
Serve the Pork in taco shells, fried or oven warmed with shredded cheese of your choice, shredded lettuce or cabbage and sour cream & chives.
We served ours with Grilled Red Mexican Corn (see recipe here), Mexican Rice (see recipe here) & Refried Beans.

Awesome meal. Absolutley tasty....

Potsticker Egg Drop Soup...

Arriving home late, hungry and still a list of to do's in hand...I threw this recipe together in a flash. The aroma was wonderful as it cooked....Ir tasted as good as it smelled!
Potsticker Egg Drop Soup

Ingredients:

  • 1 box of Chicken broth, 32 ounces
  • 3 cups of water
  • 1 cube of vegetable brotth (I used Knorrs brand)
  • 1 cup of peas, canned & drained
  • Chives, or green onions, sliced small 2-3 stalks
  • 1 heaping tablespoon of dehydrated onions
  • Garlic pepper to taste
  • 1 small pakage of potstickers (mine were Pork, premade & frozen) 12-20 pieces
  • 2 eggs, scrambled & uncooked
Directions:

  1. In a large pot add the liquid chicken broth & vegetable broth cube, cook over med hot heat
  2. Add the water
  3. Next add all the ingredients except the uncooked scrambled eggs
  4. Cook until everything is hot and blended together
  5. Drizzle the raw eggs into the hot soup. They will cook in the hot soup. 
  6. When the eggs have cooked the soup is ready to eat
Since the potstickers are frozen but fully cooked inside, this soup comes together quick & easy.
Bite, Chew & Repeat.....YUM...

Ham & Tater Soup...

Easter Dinner leftovers can make delicious new recipes...Continue the YUM!
Ham & Tater Soup
Ham & Tater Soup

Ingredients:

  • 6-7 medium russet potates, diced with skins on
  • 1 cube of Knorrs chicken broth
  • water, enough to cover potatoes in the pan, plus more as needed
  • 1 1/2 cups of cube cooked ham
  • 1 heaping cup of peas
  • 1 - 8 ounce tub of cream cheese, plain or garlic & chives
  • 3-4 cloves of roasted garlic, chopped
  • 1 medium yellow onion, chopped small
  • 1 cup of jack cheese, cubed small
  • Season with White Pepper & Garlic Salt to taste
Directions:

  1. In a stock pot place the onions, garlic and potatoes
  2. Cover with water to about an inch or two above the veggies
  3. Place the Stove burner on medium to cook
  4. After the potatoes have cooked down some, mash gently with a masher or fork, keep cooking
  5. Add the ham & peas
  6. Add the cream & jack cheese, reduce to a lower temp, stir occasionally to blend
  7. Season with white pepper & garlic salt to taste
  8. Cook until veggies are tender and soup has thickened
Serve with Hot bread....Eat, Chew & Repeat! And Enjoy......
