Krazy Salt....

Krazy Salt!!!! Do you remember " Jane's Krazy Mixed Up Salt"....I loved this salt mixture....I told a friend, and she said..."A blast from the past. YUM!"

Well, this is my copycat version of Krazy Salt. I keep a shaker full on my stove top.
So many uses; veggies, salads, meats. popcorn and more!

Creme Fraiche...

Creme Fraiche

Ingredients:
2 cups heavy cream
2 tablespoons of buttermilk or plain yogurt

Directions:
In a jar, stir together the buttermilk/or yogurt and the heavy cream
Loosely cover the jar (I use cheesecloth) . Let it the cream mixture sit at 
 room temperature for 18-24 hours or till thickened
Store in the refrigerator 

Notes: May be used for all types of food & desserts, it will sour, much like sour cream. You may also blend in 1 tablespoon of brown sugar and serve as a topping for fruit & desserts!

Stir into scrambled eggs, pancakes, waffles, cakes, use cream for shortcakes, as a topping on meats or fruit, & more...

Buttered Rum Batter...

Butter Rum Batter....
  This past week, I have had serveral emails, and a few phone calls, asking about Buttered Rum Batter. Most of the time, I use the store bought varitey found in the liquor department of the grocery stores. Usually on an end cap during hloidays or with other "stir-in's" in the liquor aisle. ANYHOW...
This got me looking for my Grandma's Original Recipe for Buttered Rum Batter...She, as I do, used it in several desserts, cocktails and Coffee!...It's also good in Hot Choclate for an "Over the Top Treat"!

Buttered Rum Batter
The CattleQueen Cooks

Ingredients:

  • 1 pound (box) of Dark Brown Sugar
  • 1 cube of softened butter, room temp (I use Salted Butter)
  • 1 1/2 teaspoons (or 1 teaspoon) of ground cinnamon
  • 1/2 teaspoon leveled, ground nutmeg
  • 1/2 teaspoon leveled, ground cloves
  • 1 teaspoon of pure vanilla
  • Pinch of Salt
  • Pinch of  Cayenne Pepper, I use a big pinch. This optional but WOW its good!
Directions:

  1. Blend all ingredients together, by creaming gently with a pastry blender, then a fork or spoon.
  2. Mix thoroughly. 
  3. I bottle the batter into smaller mason jars.
USE:
For Cocktail mixes, Baking, Meats, Coffee & Hot Chocolate.... oh the possibilities !

Hot Buttered Rum Drink:

  • Place 1 heaping tablespoon of batter, in a 8-10 ounce mug
  • Add 6-8 ounces of hot water, mix well together
  • Stirr in a large jigger of Rum (1 1/2 ounces), blend
  • Serve Hot!
  • If you want it with cream, add 1 tablespoon (or desired amount) of cream or ice cream, like Grand Dad did!

Roasted Corn Crack Dip...

This dip is absolutelyamazing.....It gets devoured in no time! It's so good, its hard to stop eating it!
I had seen several recipes for Crack dip abd had even tasted it before. BUT...I enhanced and added some ingredients...the dip is amazing and it turned out better than I imagined!
Roasted Corn Crack Dip

Note: I make a large batch because it disappears so quickly!

Ingredients:

  • 2 cups of yellow corn, I used frozen
  • 3 cups of Sour Cream
  • 1 cup of Mayonnaise
  • 6 green onions
  • 1/2 cup of chopped green &/or red peppers, raw
  • 1 can (7 ounces) of green chili's, drained
  • 1/2 cup heaping of jalapenos, (jarred), chopped
  • 2- 8 ounce cream cheese packages, softened
  • 4 cups of shredded Mexican cheese blend
  • 1/2 cup of fresh chopped Cilantro
  • 1-2 tablespoons of butter fro sauteing
  • Garlic Pepper seasoning , to taste (Check out Our Special blend here)
Directions:


  1. In a frying pan saute the trimmed green onions in a small amount of butter, cook hot and fast, they cook quickly, set aside to cool, then cut into small pieces
  2. Saute the red/green peppers in the same pan. let cool, set aside with the green onions
  3. Saute the Corn in the remaining amount of butter with the garlic pepper for seasoning. Set aside and let cool, then add to the other sauteed veggies
  4. In a large bowl, blend the cream cheese, sour cream and mayo together, you may use a mixer to blend
  5. Fold in the shredded cheese to the cream cheese mixture, blends well
  6. Next, add in the sauteed veggies, green chili's and jalapenos & cilantro. Blend well.
  7. Let the dip meld the flavors for an hour or two before serving.
Serve the dip cold,  with toasted sourdough bread or tortilla chips. This could be use as a sandwich spread or canapes also. Guaranteed to make you guests happy!

Gucamole...


Guacamole

  •  3 large Avocado's; peel, pit and mash in a large bowl.
  • Add juice of one lime and blend well.
  • Fold in:
  • 1 teaspoon of Salt,
  • 1/2 cup of chopped fine Onion,
  • 2 tablespoons Cilantro (fresh or prepared)
  • 1 teaspoon of minced Garlic,
  • 2 Roma Totatoes, seeded and cut into small pieces,
  • 1 pinch of ground Cayenne Pepper.
  • Mash and mix all ingredients together, blending well.
  • Chill covered in the refrigerator for at least 2 hours before serving.
Serve as a dip or garnish...

Devil w/the Blue Dress On...Egg Salad w/a Kick

This egg salad was awesome...a little kick of red pepper & blue cheese...A twist on the deviled egg!
I used this Egg Salad as an appetizer for a dinner with friends, serving it as a dip with crackers and celery sticks. It was also awesome served as a grilled egg salad sandwic the next day! YUMMO!

Directions:

  • 10-12 Eggs, boiled, peeled and grated
  • 3/4 cup of Blue Cheese salad dressing
  • 1/2 cup of sour cream
  • Red Pepper to taste, I made mine to Kick at first bite!
  • 3-4 pieces of cooked bacon, crumbled
  • garlic pepper, to taste
  • Minced chives, as desired
  • Garnish with Blue Cheese Crumbles
Directions:

  1. Mix well and let chill to help the flavors meld together
  2. Serve with Crackers, veggies or on bread, *I grilled mine on sourdough bread! YUM!
As I was making this salad and adding the Blue Cheese dressing the Song...
"Devil with the Blue Dress" came on over the radio! Perfect timing for the name of my recipe! :)))

Margarita Style Guacamole...

This Guacamole Dip is a little tipsy...it's made with Tequila....
My cousin had shared a recipe with me the other day, it looked delicious...I told her I had one very similar...and it was one of my favorite's....Well, I decided I'd share it with you today....Enjoy
Margarita Style Guacamole

Ingredients:


  • 4-6 avocados, cut in half, remove seed and peel
  • 3 tablespoons of diced yellow onion
  • 2 teaspoons of chopped jalapenos 
  • 2 tablespoons of finely chopped cilantro
  • 1 red medium tomato, seeded and chopped fine
  • 1 teaspoon of garlic pepper or PineCreek Ranch Seasoning
  • dash of salt
  • 1 heaping tablespoon of minced garlic
  • 3 tablespoons of Margarita Mix
  • 3 tablespoons of Tequila, *I used Petron Silver
In a bowl, mash avocado's with a fork, then add the tequila & the margarita mix, blend well.
Fold in other ingredients and blend well.  Store in the refrigeration until cold & serve

** To make a nice presentation; rim the edge of the serving bowl with a cut lime and dip in coarse salt. Then place the avocado dip in the serving dish.

Margarita Butter'd Game Hens ...

These Game Hens were very moist...You can even make them a day ahead...
A Delish Dish for Cinco de Mayo...

 There are Three recipes listed below.  the Game Hen, Margarita Butter & the Spice Blend.

Margarita Game Hens~ Simple & Easy, *description is base on per hen

  • Rinse off and lightly dry each game hen patting with a paper towel.
  • Grease the hen with the softened Margarita Butter (see the recipe below), I also place a teaspoon + of butter ( frozen is better for a slower melt), inside the hens cavity...This helps the Hen stay moist while cooking.
  • Cover the buttered Hen with a heavy dusting of the spices (see the recipe below)
  • Bake at 375 degrees for 1 hour, cover loosely with foil, if browning too fast
  • Baste with juices at least once while baking.
  • ***I placed a whole, peeled onion, cut in half in the pan to hold the hens upright and tied their legs together. This helps keep the Hen in place during baking. Serve the roasted Onion with your dinner! Yum...
**I had the Hens in the Oven, Ornery called to say he was delayed and would be home late...I finished cooking the Hens...let them cool at room temp, for a little while. Then, I placed them in foil wrap and stored them in the refrigerator. The next day, I heated the oven to 325 degrees and reheated the Hens for about 15 to 20 minutes, keep covered with foil. They were Delicious! Perfect for Dinner Parties...Make ahead & fix dinner with ease for your Guests. The best part...You won't be too tired to enjoy your party!

Margarita Butter


  • 3 cubes of unsalted butter, softened
  • 1 teaspoon of olive oil
  • 1 tablespoon of spices, (see recipe below)
  • 1 tablespoon (leveled) of prepared smashed garlic
  • 1 1/2 ounces of Tequila
  • 1 ounce of Margarita mix (you may use lime juice)
Blend all ingredients together well.


Margarita Seasoning Mix



Add:

  • 1/2 teaspoon of Onion Powder
  • 1/2 teaspoon of Cajon Spice Blend
  • 1/2 teaspoon of Mexican Oregano
  • 1-2 dashes of Red Pepper..careful its hot
  • 1-2 dashes of cumin

Blend well & season away....

Cranberry Chili Sauce for Meat...

Oh MY Gosh....One taste of this sauce is like heaven to the tastebuds! Kid you NOT! The very first bite of our Meatballs soaked in this Cranberry Chili Sauce was home cooking bliss! The cranberry is mild yet tangy...mixed with the chili ...it was just the right amount of spicy,  with a light sweet taste! The perfect blend.....       This recipe is so simple, yet BIG on taste!
Cranberry Chili Sauce for Meat...

1 Jar of Chili Sauce, *I use Heinz Chili Sauce
1 package of dry brown gravy, (do not add water), I used Knorr's brand
4 ounces of cranberry sauce *(I opened a large can & froze the remaining cranberry sauce for later use)
1/2 cup of water (add more water if needed, in small amounts)
Lightly season with Pine Creek Seasoning (recipe here) or garlic pepper
2 tablespoons of Soy Sauce
2 green onions sliced thin, reserve and fold in after sauce has blended and melded together.

Place all ingredients in a sauce pan, blend with a wire whip/whisk, cook until heated through.
Stir in the green onions, then add your cooked meat: meatballs, cocktail weenies, sausages completely,  covering the meat with the sauce....OR...Brush on sauce for ribs & chicken....
*(I used my meatloaf recipe for the meatballs, (see the recipe here)
So Easy & Simple....The taste is amazing! You may want to double your recipe!
Ornery & I took ONE bite and knew we had a WINNING Recipe!

Where did I get this recipe idea? A very good friend...Dave S., had posted a recipe on my personal Facebook page....It looked & sounded amazing...BUT I didn't have all the ingredients on hand! Sooo... I went to my "Mother Hubbard Cupboard" and started pulling things out....And the recipe was born!
Thanks Dave for the great idea! PS...This was so good I was messaging Dave the minute we finished dinner! YES...Teasing him....Now, I owe him a taste of the next batch!.... heehee

Parmesan Cheese Crisp, a Garnish Recipe...

Cheese fried crisp makes a wonder addition to many salads, soups, stew & veggies....So easy to make. Yet, adds a gourmet touch to your presentation! Very Impressive!
You may use several types of cheese for this....just experiment with the cheese you love...

Parmesan Cheese Crisp Recipe
yields 2-3 cheese crisps
1/2 cup of Parmesan, grated
1/8 cup of pecans, finely chopped (you may use walnuts or almonds or ground pistachio's), *optional
garlic pepper or Pine Creek's Ranch Seasoning to taste
Mix well
Olive Oil for frying

In a small frying pan heat the oil.
Place a small amount of the cheese mixture in the hot oil, fry like a pancake on one side then flip and cook other side. **TIP....Spray the Spatula with cooking spray each time you flip the cheese. Then it will NOT stick to your spatula.
Drain on a paper towel.
When cooled, garnish your food item! You may make them a few hours ahead of serving your dish. I place them between paper towels and place in a baggy until I use them.

**These are also good for a snack...we have made cheese chips instead of potato chips for a low carb diet!

Pine Creek Ranch Seasoning...

I love my Garlic Pepper Blend for seasoning. I use it in almost everything.  The grocery store that I use to buy this staple abruptly quit carrying the product. Dismayed and out of the store bought brand, I finally concocted my own seasoning blend...
AND it was GOOD!
So good that I mixed up plenty for the Holiday Season, to hand out to family & friends.
Such an easy gift to give.....And everyone loved it!

Chocolate Bacon Butter...Rum!!!

Chocolate Bacon Butter....RUM! Yes, that is correct....RUM...There's Rum in it!
And it's YUM too!!!
With the Holidays fast approaching...simple & tasty condiments can be a tasty addition to all your Holiday menu's or have on hand for drop in guests....This recipe is sure to be a hit...
Chocolate Bacon Butter
2 cubes of butter, softened
1 half can of frosting, Chocolate ( I used sugar free)
1 teaspoon of pure vanilla
1/4 cup of chopped pecans
3-4 long strips of bacon cooked crisped and crumbled
1 tablespoon of Rum (optional)
1/3 cup of a grated chocolate bar, *(or small chunks, and/or a combo of both)
**dash of salt, optional
Mix all the ingredients together to blend well. 
This recipe may be doubled....Store in the refrigerator
Serve with toast, muffins, fruit breads, pancakes, waffles.....& more

Ranch Style Cornbread w/ Honey Butter....

The cornbread is super moist. The Honey Butter is lightly sweetened yet big on taste.
This corn bread recipe is ALWAYS requested once it has been tasted!
I have served this Cornbread often at Ranch gatherings...It is ALWAYS a big hit!

 Ranch Style cornbread:
1 box of yellow Cake mix ( used sugar free); 
follow directions and ingredients on the box...Mine called for 3 eggs, oil & water
Mix together in a large bowl....THEN ADD:
1 package of Sweet Corn Pudding Mix along with the ingredients called for on the package:
My package called for 1 can of /creamed Corn, melted butter & water
Add the Sweet Corn mix to the Yellow cake mix and blend well.
*1 small onion, chopped fine & sauteed in 1 tablespoon of butter, optional
*1 cup of finely shredded cheddar cheese, optional 
Stir into cake batter to blend...
Bake in a loaf pan, muffin tin, or cake pan
Bake at 350 degrees , Time would depend on the pan used. Follow the directions on the cake mix box.
Cool for 20 minutes and turn out to serve.
**What You will love about this recipe: ....
You can add onions, cheese,  green chilli's, red peppers, jalepeno's or make it plain!
"So easy & never dry"

Sassy Kick-Assy Sour Cream...

This sour cream is spiced up!
 I use it to flavor soups & stews, spaghetti, hamburgers, sandwiches, omelets ....I could go on & on....
It definitely takes your food to a whole new level of AWESOME!
**Like & Share this Recipe with Style...
Sassy Kick-Assy Sour Cream
1 carton of Sour Cream, 16 ounces
1 small can of jalapenos, chopped & drain
1 small onion, chopped fine & sauteed in 1 tablespoon of butter 
1 heaping tablespoon of prepared chunky horseradish
Season to taste with Cumin, Garlic Salt & White Pepper
SECRET INGREDIENT:
*1 tablespoon of White Balsamic Vinegar 
Blend together and place in the refrigerator for at least one hour! 
*It helps meld the flavors....
If you enjoy a little KICK in your sauce...You will LOVE this recipe!

Full of "BS" Sauce (Bacon & Sour Cream)...

We were in Alaska recently visiting family...
We did a lot of sight seeing and FOOD tasting! One sauce stood out among all the rest...
We had embarked on finding the BEST hamburger the Anchorage Area had to offer...
Well...we had lots of awesome burgers...BUT the sauce served with the Hamburger at the West Rib Deli & Pub in Talkeetna, Alaska was the absolute best!!!
SO of Course...
I wanted to make a version of their FAT ASS Sauce!
It was Wonderful...
I had asked what was in the sauce when I ordered it to accommodate my burger...The waiter...hummmmed, then spouted out a few ingredients & "special spices"! So wrong HE was...BUT the sauce WAS awesome! I knew with just ONE bite... that the main ingredients were not (ALL) listed correctly...
MMMmmm...recipe search or experiment...
I was going to try and make this sauce....
 Since I don't have the official ingredients....I came up with a semi-version of my own and called it "Full of B.S. sauce". 
Because, it is full of Bacon & Sour Cream!
*I have seen several ingredients listed for Fat Ass sauce...None are the same!
So...here is a version of mine....
Found & made from one list of ingredients posted online.

"Full of B.S. Sauce"
2 small onions chopped fine, saute' in 2 table spoons of butter
1 carton of Sour cream, 16 ounces
6 pieces of bacon cooked crisp, and broken into small bits & pieces
Blend 1 table spoon of garlic salt and 1/2 tablespoon of white pepper
2 table spoons of horseradish, old fashion style or chunky
Blend well and store in the refrigerator up to one week.
*This sauce was very tasty, I used it on several food items, soups, stews, hot sandwiches & used as a dip for crackers.

 **West Rib Deli & Pub was the scene for the TV show "Man vs Food", Nov. 18, 2009
The Featured Hamburger was a 4 1/2 pounder w/ Fat Ass Sauce...Man Won!
 Bacon, onions, horseradish & spices mixed well...
(before I added the sour cream).
 Mixed, jarred and ready to use...
Not quite the FAT ASS Sauce recipe I was looking for...but, this one is really good!
The ingredients made a wonderful spread/sauce....Very tasty!
We ate every last bite! Anything with BACON works for ME!
I will continue my quest to make a close version of the real Fat Ass sauce!
For NOW....This recipe WORKS just FINE!!!
