Pine Creek Style Shrimp...

Shrimp served Pine Creek Style...
This shrimp is easy to fix and delicious to eat! It can be fixed four different ways.  You won't be disappointed. A great dish to serve guests.
 Everything you need for a sassy salad!
 Lets start with the spicy cocktail sauce! This is good STUFF!
Chipotle Cocktail Sauce 
1, 12 oz bottle of Chili Sauce
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon chipotle tabasco sauce
1 heaping teaspoon cilantro
1/2 cup horseradish
1/2 cup catsup
salt & pepper to taste
This will last for 5-7 days in the refrigerator. It is best to make it the day before serving. This allows the seasonings to blend.
 Add the cilantro to the chili sauce, catsup, Tabasco, Worcestershire sauce and lemon.
Add horseradish and season with salt and pepper.
Mix well. Store in the refrigerator.
Pine Creek Style Shrimp Salad:
Rinse the Shrimp and chill in the fridge. Wash lettuce & wash one stalk of celery.
Place the lettuce on a paper towel to drain.
Chop celery thin and fine. Do the same with the peeled cucumber (use 1/2). Peel & the avocado (use 1/2 for shrimp salad), chop small.
Place all ingredients in the bowl. Used some lemon juice on the ingredients, toss with a spoon to cover.
Use salt & pepper to taste
Add chilled shrimp and mix.
Remove the cocktail sauce from the fridge and add 1 cup sauce to the salad.
Mix well. Return to refrigerator to chill at least one hour. Then serve.
Option One: Serve as a shrimp cocktail as an appetizer or first course.
Option two: Serve as a side salad or a luncheon salad.
Option Three: Serve a main salad with flat bread or crackers on the side.
Option Four: Serve as an appetizer on flat bread or crackers.
No matter how you choose to serve this dish...you're gonna LOVE IT!

Jewelry~ Homemade Style...

I enjoy making jewelry. I have made several style's.
 Western style is my favorite! 
I love the all the colors. I try to never make one the same as another. 
 Its fun to have an original!
I mostly make them for family & friends. 
Occasionally, I donated "them" to local functions for drawings, raffles or auctions.

I recently donated this necklace to a local Cattlemen's dinner for a raffle.
 A friend loved the Chocolate Pearls and Brown Turquoise Necklace set I donated to the Cattle Woman's Fashion show last fall. Her's (above) had the same beads with an added rhinestone cross. She wore it to dinner this weekend!
It looked fabulous on her!
 I love the mixture of colors on this one!
 I love this green turquoise with the quartz! In a picture below, I have added a western concho. It's removable, I love having a versatile option! 
On the left is a tigers eye and yellow quartz necklace.
OH...I love the pink pearls and brown turquoise necklace with the cross. BEAUTIFUL!

Just a few of the jewelry pieces I have made...
I love to wear several pieces together, sometimes I will add silver or gold chains to the mix. Or pearls....I LOVE to mix long strands of pearls with other jewelry such as turquoise!
It looks amazing together!
Its like playing DRESS-UP all over again!

"Will You Marry Me?" Cookies...

These cookies are delicious! I have had many marriage proposals after the first bite. Men LOVE these cookies!
 A friend is having a milestone birthday this weekend. 
They are coming to our house for the Red Bluff Bull & Gelding Sale this weekend.
 So I called his wife to see what dessert he wanted for his birthday on Saturday. An almost immediate response was; "Will You Marry Me" Cookies!

"Will You Marry Me Cookies"

"Will You Marry Me Cookies"
 2 cubes of softened butter
1 cup of packed brown sugar
1/2 cup of sugar
2 eggs
1 teaspoon of pure vanilla
1 1/2 cups of flour
1 teaspoon of baking soda
1 teaspoon nutmeg 
1/4 of cinnamon
1/2 teaspoon of salt
3 cups of oatmeal, old fashion oats
1 cup of chocolate chips
1 cup of toffee bits (8 ounces)
1 cup of chopped pecans
Bake at 350 degrees for 10-12 minutes
Cool cookies for one minute before removing from cookie sheet.
Store in an airtight container.
 Cream together butter, brown sugar, sugar, eggs and vanilla.
Blend well.
Add flour, baking soda, salt, nutmeg, cinnamon and oatmeal.
Blend well.
 Next add chocolate chips, toffee chips and pecans. 
Blend well.
 Use a table spoon to scoop out the cookie dough.
Prepare your cooking sheets with cooking spray.
 Roll & shape into balls. Set your oven to 325-350 degrees.
 (start with 350, lower if needed to 325, every oven can be different)
Bake @ 10-12 minutes until done.  
Cool for 1 minute, but not longer than two minutes.
Spray your spatula with cooking spray to remove cookies easily from the pan.
 
 Ohhh yum... these are GOOD!
 Little crispy edges and soft middles....OH MY!

Awesome with a cup of coffee!
 **If you want to serve the cookies warm...turn the oven on to heat. Preheat at 350 for a few minutes. Then turn the oven off and set a few cookies on a baking sheet warming slightly...Serve with coffee or milk!
 Helpful Hint:
If you want to freeze cookie dough for later;
make a cookie log and wrap in foil & freeze.
Mark the outside with the date and the name of cookies.
Then freeze until needed.  This saves a lot of time. 
These are great to have on hand for unexpected guests.
Simply, partially thaw, slice and bake!
