Prime Rib Tacos...for Breakfast

~6-8 Corn Tortillas, lightly and quickly fried into a shell shape
~6-8 Eggs, scrambled together, not cooked, see instructions
~1 cup of cooked Prime Rib, cited into small pieces
~2 bulbs of garlic, chopped fine
~1 small yellow onion, chopped
1 1\2 cups of shredded cheddar cheese
~1 tablespoon of butter
~cumin, pinecreekstyle ranch seasoning or garlic pepper to taste
~cilantro, chopped fine or left leafy, your preference, amount desired per taco
~hot sauce, your choice
~olive oil for frying shells
In a fry pan, grill the onion & garlic until roasted in the butter.
Toss in the meat to warm.
Next add the eggs and scramble with the meat & onion mixture.
Season with Spices. Cook until done
*Have the Taco shells cooked and readyto fill
Fill tacos with the scrambled mixture, top with cheese & cilantro
Use Hot sauce as desired.
**Tacos may be slighlt warmed in the microwave or warmed oven before serving.
