SnickerDoodle Cupcakes...

Snicker Doodle Cupcakes...
 Browsing through Pinterest last week I saw a recipe for Snicker doodle Muffins. BOY did that bring back memories.  My granny had made muffins similar to these! She called them Sugar/Cinnamon Muffins. 
We made them together, often. 
They are great with your favorite cup of coffee on cold mornings.
 I LOVE Snicker doodle cookies. So does my family, in fact they are my Brother-in-law's favorite too!
When the kids were small and I would make granny's muffin recipe.
My kids would call them "Snicker Doodle Cupcakes".
SOooo, I found my (granny's) recipe and I made them this morning!
 Still YUMMY!!!! 
I think you'll enjoy them too!
*I made an adaption to the recipe....I need to watch my sugar along with other members in my family.
I used "Stevia" instead of sugar....IT (the recipe) was still AWESOME!
 So the sugar and the Stevia are interchangeable! How awesome is that! 
MMMmmmm.... so good! And--- the house SMELLS wonderful too!
Ingredients:
2 cubes of butter, softened
1 cup of Stevia (or Sugar)
1 teaspoon of pure vanilla
1 teaspoon of *Rum or rum extract 
*(if you have none, use another teaspoon of vanilla)
2 eggs
3/4 teaspoon of baking powder
3/4 teaspoon of baking soda
3/4 teaspoon of cream of tartar
1/2 teaspoon of nutmeg
1 1/4 cups of sour cream
2 1/4 cups flour
*Pinch of salt, reserve until last

In a small bowl mix: 
3/4 cup Stevia (or Sugar)
1 teaspoon (not leveled, slightly heaping) cinnamon
Cream the butter, stevia (sugar), vanilla, rum and eggs. Blend well.
Add baking soda, baking powder, cream of tartar & nutmeg.
Blend well.
Prepare the muffin tin with cooking spray and heat oven to 350 degrees.
Your batter will look and feel light and spongy.
Fold in the sour cream and blend well.
Add the flour.
Blend well. The batter is almost ready set aside for a moment.
Mix the reserved (Stevia) sugar and cinnamon together.
Take a pinch of salt sprinkle on top of batter and stir once more. 
Batter is now ready.
I used a soup spoon to scoop out some of the batter. 
*I prepare the spoon with cooking spray first so the batter would not stick to the spoon.
Take a spoonful of batter and drop into the sugar mixture.
Cover the dough with more sugar mixture.
Lift the dough out of the sugar and place in the greased muffin tins.
I used metal and silicone pans just to test cooking times.
 Both worked beautifully. 
Bake at 350 degrees for 20 minutes.
Beautiful and Yummy looking! 
They & the kitchen smelled wonderful!
 BUT, they needed to cool for 5 minutes before turning out of the pans. Cool about 10 minutes BEFORE you EAT them. Don't want to risk burning your mouth!
I know...they SMELL good!
These beauty's need NO frosting or butter!
Okay....I ate MORE than ONE! AND...I did have butter on ONE! 
I WAS TASTE TESTING!!!
Maybe I should rename these...

Ok can't wait to try these babies!! Looks so easy. That's what I call making every calorie count! And with Stevia they are so much more figure friendly! Thanks Nee Cee
