Peanut Butter Cracker Balls with Trendy Treehouse

Hi, I'm Tara, NeeCee's daughter. I am here today to share my recipe for Peanut Butter Cracker Balls. I also have a blog Trendy Treehouse, if you'd like to stop by. ;)

I was inspired to make mine by these Peanut Butter Cracker Balls from Jerri at Simple Sweet Home

Below is my modified version of these. And yes, I tripled my batch. LOL You can easily make 50 of these for a party with this tripled batch. They will be small portions, but great for parties. We made about 24 large ones here! On to what you need...

...What you will need...
3 cups of Ritz Crackers
1/4 cup of Powdered Sugar
1 1/3 cup of Peanut Butter
Chocolate Chips (assorted flavors)
Vegetable Shortening

Here is what they will look like when you are done.

Start by crushing your crackers in a gallon size zip loc bag. I used two packages of Ritz and it came out to a little more that 3 cups. Add them to a bowl and mix in your 1/4 of Powdered Sugar. Gotta add some sweetness. ;)

Next add in your Peanut Butter. Mix well and chill in fridge or freezer for 15-30 minutes. Once chilled, add some powdered sugar or shortening to your hands to keep the peanut butter from sticking and start rolling out your Peanut Butter Cracker Balls. Size is totally up to you. It just depends on how many you are wanting to share with. Then again, chill for another 15-30 minutes.

While they chill get out your chocolate chips. I used semi-sweet, white chocolate and peanut butter. I used more semi-sweet than any but added in the white and peanut butter to taste. Just mix them all into a microwave safe dish and when your Peanut Butter Cracker balls are done chilling, heat up the chips. Heat in 15-30 sec intervals so you don't scorch the chocolate. I even added in a little shortening to thin it out a bit.

Dip each of the balls into the chocolate and set on wax paper to set. I wanted to add a little more to mine. So I melted more peanut butter chips and white chocolate chips together. Again a little shortening was added. Then I just drizzled them over the top of the Peanut Butter Cracker Balls. Let set and DONE!!!

Here is one with a bite taken out of them. YUM!
You are going to love these.
