Scrambled Pancakes for Breakfast...What?

Scrambled Pancakes for Breakfast! ...What???
A great Mother's Day Treat and easy for kids and dad to make.

The idea of scrambled pancakes kinda sounds funny at first. Then, there are the puzzled looks on people's faces when YOU say SCRAMBLED PANCAKES! 
We laugh and tell them how great they taste.
A while back my daughter, (Tara over at Trendy Treehouse), was telling me about a recipe for scrambled pancakes. It took me a moment, I hadn't thought of these pancakes in years...
(MMM...I KNOW ABOUT THESE, FORGOT ALL ABOUT THEM, Oh MY Gosh!). 
I told her I had had them before and it was a German recipe called Schmarren. It translates to little pieces of pancake; ergo scramble pancakes. In my grandparents families it was staple served as a main meal when the meat supply ran low! And/Or the budget!  The same meal was served by my husband's grandmother's families. 
We called this type of food; poor man's food. Sticks to the ribs and served very inexpensively. Now-a-days, it's a treat! Very Yummy and easier than cooking a bunch of individual pancakes. The best part about cooking this meal...you get to eat with everyone, NOT after everyone! Works for ME!
Just plain old comfort food....
It is now a favorite breakfast in our daughter's family. 
I hadn't made this meal in YEARS! I had actually forgotten about it! 
So this Sunday we made Scrambled Pancakes! 
We made it for dinner! We love breakfast for dinner.

 You may use any pancake recipe you like.....just cook it in a frying pan over medium+ heat. Just like you would with scrambled eggs.
Banana Nut Scrambled Pancakes
1 package of banana pancake mix, make as directed according to the package.
(mine called for 1 1/2 cups of water)
Add; 1 teaspoon of vanilla
dash of cinnamon
1/2 cup of chopped nuts, *I used walnuts
 Mix pancake mix (as directed) in a large bowl with a spout. Add the vanilla, cinnamon and walnuts. Blend well.
 Have the frying pan ready; heat, spray with cooking spray and add 1 tablespoon of butter to melt. Add pancake mix to the heated pan, let set for one minute. As it begins to cook, stir and fold the batter as you would for scrambled eggs.
 The batter cooks fairly quick so have any condiments ready ahead of time. Add more butter as needed and stir and turn often.
When the scrambled pancake is fully cooked it will be fluffy and lightly browned. 
 We served ours with bacon and strawberries with syrup on top! And of course MORE butter!
 It's a great breakfast for Dad and the kids to make for Mother's Day. I plan on making Scrambled Blueberry Pancakes soon for some house guests!
 They will LOVE them!

Schmarren (German Scrambled Pancakes)
Grandma D.
2 Tablespoons of butter, softened
2 tablespoons of sugar
4 eggs
pinch of salt
2 cups of flour
1 cup milk or cream
Mix together well and cook in a cast iron skillet on medium heat, turning until cooked and lightly browned. (Like scrambles eggs)
*use extra butter if needed
Serve with syrup and fruit.

I've never heard of scrambled pancakes! My kids love pancakes. It's their favorite dinner. There is a good possibility that you've literally changed my pancake making ways! :)
