Pink Vodka Lemonade Cake...

Ready to transport to a party...
This cake was an "absolute total smash hit" with my taste testers!
You will add this to your list of favorites!

Pink Vodka Lemonade Cake
*Please read the whole post/recipe before assembling the cake. There are a few simple steps to follow while preparing this lovely cake. 
 Pink Vodka Lemonade Cake
Preheat the oven to 350 degrees.
1- Package of Lemon Supreme Cake mix
1- 3oz package of instant Lemon Pudding mix
3 eggs
1/3 cup of canola oil
1/2 cup of whipping cream
1/2 cup of pink lemonade frozen concentrate
10+ drops of red food coloring
Mix well
Prepare the baking pan with cooking spray and coat with sugar!
Place the cake mix in your prepared pan.
Bake in a bundt/fluted tube pan for 38-43 minutes.
 While the cake is baking mix the following ingredients together:
Lemon Vodka Glaze
3/4 cup of pink lemonade concentrate
1/4 cup of vodka (unflavored)
1/2 cup of sugar
Mix well and let blend. May be kept in refrigerator while cake is cooking.
~~For a non-acohol cake; simply use a total of 1 cup of lemonade concentrate replacing the vodka.~~

Lemon Vodka Glaze 
 When the cake is finished baking. Do the toothpick test! Then let cool for 20 minutes. Cake should still be warm. 
*Leave the cake in the PAN, do not turn out yet. 
Gently use a fork or a sharp knife to make small slits or prong marks around the cake. *(see photo above) 
 Next, pour the Lemon Vodka glaze over the cake....
 ***The glaze may look like TOO much liquid. It is NOT!
Pour the full amount of the mixture over the cake. Let the cake rest (in the pan) for another 20-25 minutes while the liquid absorbs into the cake.
Then turn the cake out of the pan onto your cake plate.
Oh My... This Cake smells AMAZINGLY GOOD!
It may be served with or without glaze...
Either way, it's a 
 yummy treat for your taste buds! 
So now for the icing...
 Icing on the Cake...
1/4 cup of softened butter
2 cups of powder sugar
2 tablespoons of whipped cream
1/4 teaspoon of pure vanilla or almond flavoring
Add a few drops of red food coloring to achieve the color of pink you wish.
Candy sprinkles and/or sugar glitter
*This recipe will glaze 2 or more cakes unless you choose to use this icing as a frosting.
**On the cake below I used a small amount of white icing first, for a pink & white look.
Pink Vodka Lemonade Cake
This cake would be wonderful for a wedding shower. It is moist and flavorful. It slices well and it is similar to a pound cake.

I've been looking for a pink lemonade cake with vodka for my friend's birthday! This looks perfect! Did you use a lemon cake mix too? I think that's what I see in the picture, but it's not listed and I don't want to mess up. Any advice if I use the mini bundt pans?

Jennifer...Please excuse my slow response....for some reason this comment went to spam...Obliously my comment is late...Yes..I did use a Lemon Cake Mix as my base for the cake. Mini bundt pans would work perfectly, the only adjustment would be cooking time. I would suggest googling cooking times for the pan. Especially
if you did not keep the pan directions for usuage for that exact pan. Once again so sorry for the delay on the response...I hope you friends cake was relish!
