Scrambled Blueberry Pancakes w/ Bacon & Syrup....

On a recent weekend we entertained a house full of guests. This is the easiest breakfast to feed a crowd! *(I tripled my recipe for this crowd! Whew...)
The  Scrambled Blueberry Pancakes were the best choice to feed 20 people! 
The cousins by the dozen's give this recipe a 2 thumb's up. They couldn't voice their opinion; their's mouth's were too FULL!  
All I heard was Mmmmm's & Ahhhhh's. 
Oh and a few...

 Scrambled Blueberry Pancakes with Bacon & Homemade Blueberry Syrup
 Blueberry Pancake Recipe
~1 blueberry muffin mix, I used a Betty Crocker brand
Follow the pancake directions on the side of the box
 *(or adapt your box to these recipe)
~1 1/4 cups of water
~2 tablespoons of oil
~2 eggs
1/2 cup of chopped pecans, optional
~*Drain the included can of blueberries, reserve the juice for the syrup
~ Save the blueberries for the pancakes;  rinse gently with cool water and let dry. **Do Not add blueberries until later.
Mix pancake batter well in a large bowl and set aside.
 Blueberry Syrup Recipe:
3/4 cup of maple flavored syrup *(I used sugar free)
1 teaspoon of cornstarch
add Juice from the blueberry can
Blend well in a sauce pan with a whisk over medium heat until it starts to thicken.
Let cool before serving.
Homemade... Blueberry Syrup
 Pour the pancake batter into a large greased frying pan.
 Add 2 tablespoons of butter to melt. Scramble as you would scrambled eggs over medium to medium high heat. These cook fairly fast.
 We cooked some bacon on the broiler rack in the oven at 425 degrees for about 15-20 minutes. Ovens vary, so check often.
**The bacon was crumbled when done cooking and added later on top of the scrambled pancakes.
 After placing the pancake in the frying pan, add the blueberries and pecans on top of the mix. When the batter starts to bubble, stir and turn. The scrambled pancake will cook quickly.
Breakfast is ready!
We had toppings ready; Blueberry & Maple Syrup's, Whipped Cream in a Can and Powdered Sugar. And we can't forget the crumbled BACON!
So easy to serve to a crowd. The best part...they may serve themselves.
My best part:...I get to eat with everyone at the same time! No slaying over many, many pancakes! YEAH...better toss some flour in my face so I LOOK like I worked hard! HaHa....
