Peach Champagne Ice Cream....

Peach Champagne Ice Cream...
It's heavenly...
This ice cream is semi-home made and so amazing! The taste is out of this world! So refreshing! An instant hit...NO thumbs UP this time!
Everyone was TOO busy Oohing & Awe hing while eating! 
Only when they came up for air....did I hear...
That was AMAZING! Seconds please?!?!?
***I used sugar free products...You don't have too!
Turn on the Oven to 350 degrees to preheat! 
YES...we are cooking the peaches!
You will need:
1 carton of vanilla ice cream (I used low carb/sugar free ice cream), let soften while preparing the peaches ....
1 jar of sliced peaches, drain juice; freeze juice for a later use!
Place drained peaches on a parchment lined baking sheet
Next:
Mix together in a pouring pitcher...
1 tablespoon of WHITE balsamic vinegar
1 teaspoon of honey
3 tablespoons of champagne (go a head & pour a glass for yourself  to enjoy while you're working! :)
* It's a recipe rule...Heehee Really it is! Haha...
Add 1 table spoon of sugar (I used *Stevia)
Add 1 tablespoon of brown sugar (I used *Splenda Brown Sugar)
Mix well
Sprinkle Lemon infused olive oil over the peaches.
Then pour the mixed liquid evenly over the top of the peaches.
Place the peaches in the oven for 40 minutes.
Remove from oven and cool!
Drain the juices off, do not discard.  Reserve 1/4 cup of peach juices, *Freeze remaining juices for other recipes or discard.
(Juices can be used for basting ham, chicken or fish or pork . Or used in sauces and punches. Waste Not, Want Not) 
Mash cooked peaches well, them fold into softened ice cream.
Re-freeze for at least 2 hours. Then serve!
Sprinkle evenly, lemon infused olive oil over the top of fresh peaches
 (YOU MAY USE PLAIN OLIVE OIL.)
POUR THE LIQUID MIXTURE OVER THE TOP OF THE OILED PEACHES.
Place in the oven at 350 degrees for 40 minutes. They will be juicy!
Drain juices and retain 1/4 cup juice for the recipe.
Mash the peaches and 1/4 cup of the juices together...Mix & Mash well.
Mix well with the softened ice cream, blend well.
Blending the peach a little more juice mixture into the ice cream....
Just because....not too much, you don't want to change the ice cream's texture. Just a teaspoon or two if you like.
Refill the original container with the peach ice cream. Have another container or two small ones ready to fill also....Your volume is larger with the peaches added.
** You may also use rubber cooking molds for fancy style desserts!
 Serve with whip cream & nuts or over pound cake...
Or...just by itself! YUMMY!
MMMmmm...I wonder what a Peach Ice Cream & Champagne float might taste like? I might have to try that!!!
