Cheesy Spaghetti Pie...

Cheesy Spaghetti Pie
"Baked & Tasty"
We were at our Son's house....It's hard to always see the 5 kids, at the same time!
 They are so busy with school, sports, clubs, etc....
So to help out I made a dinner that could be served after sports practice, on the Go or after the big game! ...I'm SO glad I'm Nana!
With 5 kids, going in 5 different directions, every waking moment...Mom & Dad needed a night off from fixing dinner!
SO...Nana to the rescue, (And HAPPY to do it)!
Baked Spaghetti Pie, Corn & Buttered Sourdough Bread
This dinner was tasty! We served dinner cafeteria style and ate in shifts because of the kids coming and going's! 
This dinner handles large crowds and stands up to excessive time frames while keeping it warm or reheating!
The seasoning & style of prep seasons the spaghetti immediately! No waiting for 2nd day seasoning. *(Our family loves Spaghetti on the 2nd day!)
 This is so easy to prep ahead of time and cook later. I would serve this dinner for my kids when they were playing sports!
 Baked Spaghetti Pie Recipe
(This is a large recipe and may be divided in half or frozen for later.)
2 boxes of spaghetti pasta, break into thirds or at least half
(cook as usual, drain and set aside to cool)
1 large onion, diced
2 large cans of tomato soup, do not add anything, use concentrated
1 can of chopped olives, no juice
1 package of spaghetti sauce, add dry to the sauce
2 tablespoons of tomato paste
1 can of diced roasted tomatoes, do not drain
6 eggs, use them to toss with the cooked spaghetti (see photo's)
1 carton of ricotta cheese, reserve to add into the sauce
2 packages of grated cheddar cheese
1 carton of Parmesan cheese, grated
2 pounds of lean hamburger, cooked with the onions until done
Season meat and onions with pepper & garlic salt to taste
Cook the pasta and meat, make the sauce & add seasonings...
Add cooked meat/onions to the sauce
Toss the cooked pasta with the eggs, fold in the cheese then add the sauce and mix well.
Place in the oven at 350 degrees for 45 minutes. Cover with foil - If the cheese starts to brown.

 Sauce:
Combine the Soup, olives, tomatoes w/juice, spaghetti spice mix & tomato paste
 Cook the meat & onions together, add spices to taste
 Cook until done...
 Add scrambled raw eggs to the cooked spaghetti and toss well.
 Add the grated cheeses & mix well...
 Add the ricotta cheese to the sauce and blend...
 Add meat & onion mixture to the sauce...mix well
 Add the sauce to the spaghetti mixture and mix well...
 Almost ready for the oven...
 Add 1 cup of reserved grated cheese to the top of the spaghetti.
Then bake at 350 degrees for 45 minutes. 
 And....It's ready! Yummy...
You won't be disappointed...It's that GOOD!
