Strawberry-Blueberry Shortcake w/ Chantilly Cream...

This was our 4th of July dessert...A special request from K-8! She had brought a few of  her friends up for the weekend...We had a grand time!
 Strawberry-Blueberry Short Cake

Ingredients:

Chantilly Cream:

  • 2 cups Heavy Whipping Cream
  • 3 tablespoons of Powdered Sugar
  • 1 tablespoon of powdered white vanilla
Fruit:

  • 3 cups of sliced Strawberries
  • 1 cup of Blueberries
  • 2 tablespoons of Sugar or Stevia


Puff Pastry

  • 1 box, thawed and cut into 6 squares
Directions:
  1. Bake pastry according to the box
  2. When baked, set aside
  3. Prepare fruit and chill
  4. In a large metal, chilled bowl, place the whipping cream, powdered sugar & the powdered vanilla
  5. Whip the cream mixture until it sets up. This takes a short while..do not over beat otherwise you will have sweet butter.
Assembly:

Makes six desserts, divide ingredients equally:

Separate the puff pastries in half
On a plate place the bottom portion of the pastry
Add a dollop of Whipped Cream
Spoon on some fruit mixture
Add another dollop of whipped cream
Place the top of the pastry on top
And serve...
 We added Pastry Stars to our Red, White & Blue Dessert for fun!
