A simple breakfast packed with flavor. Sure to please anyone.
For each Omelet:
2 large eggs
3 tablespoons of your favorite canned chili
add grilled onion to taste
season to taste with garlic pepper
1/4 cup of shredded mexican cheese
2 tablespoons of your favorite salsa
seasoned mashed avocado
Mash one avocado in a small bowl, season lightly with garlic pepper, chili lime seasoning and a squeeze of lemon or lime. Mix well.
Set aside, letting the seasonings meld.
Prepare omelet pan with cooking spray and a tablespoon of butter.
while butter is melting...scramble the eggs in a small bowl, then pour into the hot pan.
Let the eggs set up on the bottom, add the tablespoons of chili down the middle of omelet. Season with garlic pepper, add grilled onions to taste. Add shredded cheese to omelet. Fold over one half of omelet, let set a minute or two. Then turn omelet out onto plate. Place a a tablespoon of avocado on top of the omelet, drizzle with salsa, sprinkle with a few grilled onions and a touch of cheese.
Serve with garlic toast.
