Corned Beef Hash for Breakfast...

Corned Beef Hash & Eggs...
Nothing better than GOOD reruns! (Our family calls leftovers...reruns) 
Left over corned beef made into hash is wonderful for breakfast. 
See the recipe below...
 
Ingredient's:
Left over corned beef, trim and dice
1 large onion, diced
 Left over Potatoes and Cabbage/Onions, drained and diced.
 Bell peppers, diced. Use the equivalent to 1 bell pepper.
 I love the various colors I used.
*I had used several pieces of bell peppers I had on hand from another recipe. 
 Toss and combine together...
 Cook in a frying pan using cooking spray & olive oil. *I used garlic infused olive oil. Season with Garlic pepper. Fry until heated through, you will want the peppers and onions grilled/sauteed.
 Serve with Fried or Over Easy Eggs on top. Serve with your favorite toast.
Oh, yummy...This was so good with the yolk mixed throughout.

Here's a hint.....
The broth from the leftover Corned Beef dinner may be frozen into cubes or a freezer bag and used later for soups, stews or gravy's!
