Paniolo Open Faced Omelete...

Traveling back from the Summer ranch we stopped to have a late breakfast. I ordered a Cowboy Omelet! It sounded wonderful....Ummmm..No! I (do try to) only write nice reviews...So no names here...But,  I could have taught the cook a thing or too! :) Just Say'n....Still craving the dish, I created it the next day at home. We actually fix this quite often. It's a favorite of many our guests!

 Paniolo is the Hawaiian name for Cowboy....We love the Up Country on the Big Island of Hawaii...Beautiful Country...

Our Paniolo Omelet is made with fresh ingredients & Prime Rib.....Delish! In Hawaiian...Ono Kine!

Paniolo Open faced Omelet

Ingredients Per Omelet;

  • 2-3 eggs, cracked and scrambled
  • Sauteed onions,  amount as desired.... *I used a small onion for 3 omelets
  • 1 small tomato, chopped, place on a paper towel to absorb excess liquid
  • 1-2 tablespoons of black olives, sliced
  • 1-2 Jalapenos, sliced and drained
  • 1/2 Avocado, sliced and drizzled with lime or lemon juice to prevent browning
  • 1 heaping 1/4 cup of sliced cooked Prime Rib/Roast
  • 1/4 cup of cheddar cheese
  • A dollop of Sour Cream
  • A dazzle of your favorite hot sauce
  • garlic pepper to taste
  • 1 tablespoon of butter
  • 1-2 tablespoons of roasted corn, optional
Instructions:

  1. Prepare all your ingredients first. Have them ready to layer as the eggs are cooking 
  2. In a small to medium fry pan, toss 1 tablespoon of butter to melt, coat pan
  3. Oven medium heat, cook your eggs in an open face, fritata style...when the eggs begin to set slowly add the sautéed onions & seasonings
  4. Next, add the cooked meat, let the eggs set up
  5. Now, layer the remaining ingredients on top,  as desired 
  6. Remove from the pan, in a flat style and serveC
