Beef Bundles with Layered Dip...
My sister-in-law asked for a simple and easy recipe to fix for an upcoming Cattle Woman's Event...The Beef 'n Brew!
So here it is...So delish and easy! It will be a hit for sure..... 
 This meal was yummy and the layered dip was easy. I used items for the dip that were already prepared, making the process easy-peasy!
It's a great presentation, easy to prepare in advance and best of all...

Jane loved the look of my Pear & Plum Bundles seen HERE.
So when she asked for a Beef Recipe, she mentioned the fruit bundles.
I had intentions of making my Beef Egg Rolls soon....So I created the Beef Bundles instead!
 ***(I will Do the Beef Egg Rolls soon...Promise! I Pinky Swear!!!)
Recipe:
1 cup of cooked beef, cut into very fine cubes,
 (I used precooked Tri-Tip from the store)
1 small can of dices tomatoes w/garlic, drain (very) well
1 can of cooked potatoes, drain and diced small
1/2 medium onion, chopped fine
1 small can of green chilli's, drained well
1/2 can of corn, drained
1/2 can of ranch beans, drained & lightly mashed with a fork
1/2 cup of finely chopped cilantro
1/2 jar of brown gravy
1 package of au jus, leave dry, use as seasoning
1 cup of grated cheese, I used the four cheese, Mexican Style 
Chipoltle & Worcestershire sauces, to taste
Extra spices to taste: Garlic Salt, Cumin, Onion Powder & White Pepper
(I used all of the ingredients listed)
2-3 packages of Egg Roll wrappers
Mix all ingredients together and place a heaping tablespoon of mixture on the wrapper. Roll or bundle together, bake at 400 degrees for 10-12 minutes.
Use foil over the top of baking wrappers during the last 5-7 minutes to prevent burning.
Dip ingredients & Instructions are listed below!
Please read all instructions (here & below) before baking :)
Throw everything into a large bowl (except the wrappers) and mix well.
Mmmm, this is good stuff...
Have some cooking oil ready to help seal the wrappers together....
Place a heaping teaspoon of mixture into the center of the wrapper...
This process is for the BUNDLES.
Gather together and pinch to hold...ready for the oven!
For the Beef Rolls:
 Place the same amount on the wrapper (1 heaping teaspoon), lay the wrapper in a diagonially. Fold the bottom corner over the top, then fold in the two side corners and roll closed.
Ta-Dahhh....Ready for the Oven
Bake at 400 degrees for 10-12 minutes....Protect with foil, half way through to prevent burning.
While the Bundles are cooking....Prepare the dip!
OKAY...this is too easy & Pretty too!
Sour cream
Salsa
Bean Dip or leftover ranch beans, smashed
Avocado or Avocado Dip
Left over corn kernels, *optional
Cheese for garnish
Layer into small, clear cups for presentation, in small amounts.
